“Did you ever beam in Clio’s eyes?”
“Beam in her eyes? You mean shine a light in them?”
“No, you know, beam in them, you just look right in her face.”
“I suppose…”
“Hagrid and Dumbledore do it all the time.”
“They beam in people’s faces?”
“No, they just beam around. They’re always beaming around.”

At this point in the conversation it became obvious that Isaac was talking about a word Rowling frequently uses to describe an affectionate smile. But before that moment of comprehension, when I was in my early morning daze and enjoying the feeling of charmed confusion that Isaac’s observations often provoke, I had such a different picture of beaming. Just last week I wrote this sentence in these very virtual pages,
“I love to think about people having a light inside them, even being that light. I believe that this is something that every creature has, and as we grow and become jaded and mature, we learn to hide our light, we become closed and dark and careful. You can see it in dogs and children, though, everything they feel comes beaming out of them, unfiltered, unshaded, so bright and powerful you can warm yourself in their glow.” So as I pictured it in my mind, if you beam in someone’s eyes, you shed all the light and warmth of your love and spirit in their direction. You send all the glow of your hope and grace towards them. And probably they’re ignited by your beam, you help to kindle their beam, and then you have mingling beams, which flame higher and brighter than one beam alone. You’re a beamer, and now they’re a beamer, too. If ever I met a beamer, it’s our Isaac. From when he was very tiny, he would smile at people, even at complete strangers, and you could tell that their whole world had brightened perceptibly. He’s always beaming around, that Isaac. I’ve been feeling discouraged today, but I keep thinking about beaming. I keep thinking about people all over the world working so hard and hopefully, just to stay alive, to get by, to get ahead, to make something good; and about all of the rejection and discouragement that casts a dark shadow over everybody. And then I think about all of the beaming going on, all of the beamers in the world, spreading their lights around, breaking through the clouds with great rays and flashes of light. “For beamers came from around and counforted her, beaming that place of darkenesse wyth unspeakable cleernesse.” After all, we all have our own light, we’re all beamers.

These empanadas have a sort of golden glowing theme to them. Pretty golden beets, plump golden raisins, warm golden-brown crust. They’re a little sweet because of the raisins and beets, but they have earthy beet greens and spinach and delicious crunchy pistachios to set that off. They’re tender on the inside and nice and crunchy outside, because they have a little cornmeal in their crust. I grated the beets before I roasted them, which gives them a nice soft/crispy texture and a perfect roasty taste. My golden beets were tiny, so I decided to add some grated carrots to the roasting pan, which went nicely with everything.

White bean, spinach, and pecan timbales

I’ve just discovered that a “hope” is a piece of enclosed land in the midst of fens or marshes or of waste-land generally. (OED) It’s also a small, enclosed valley, or an inlet, a small bay or a haven, you’ll find “wide green holms and deep blind ‘hopes’ or hollows among the mountains.” What a beautiful idea! Hope is a place. A verdant, sheltered, fertile place in a swampy treacherous world. A haven. You can travel to Hope, over the mountains, through the swamps, or across the sea, and find shelter from the winds and waves and quagmires. You may be driven there by “contrarie winds,” after weeks or years adrift and uncertain with no clear course. When the storm calms, you’ll find yourself in a quiet, peaceful place where you can safely come aground and think clearly and make plans for your future. Or maybe you’ve heard stories of Hope, and all your life you’ve thought, “one day I’ll make a journey there.” You live in a cluttered ugly world surrounded by confusion and discouragement, by empty cleverness and petty competition. So you gather your supplies, your favorite foods, your bag of wine, your warm clothes and walking stick, your good friends and your best dog, and you’ll set out for Hope, having adventures along the way that inevitably involve trolls and dragons and giant spiders. Or maybe Hope is closer than you think. Maybe you live in a giant landfill, a wasteland of garbage where nothing good grows, and everything goes to rot and ruin. But somewhere in the middle of it all is a sweet-smelling refuge, a Hope where people are working on good things. And however you get there, once you reach Hope you’ll find what you need to make whatever you’ve been dreaming of. You’ll find rich soil and soft warm rains and abundant sunshine, you’ll plant seeds, and you’ll wait and watch for them to grow. You’ll tend the bright tender seedlings, and wait and plan for their fruits and flowers, which will be beautiful and nourishing. You’ll remember where you came from, and think about where you’re going; you’ll mix desire with memory and expectation. And when the flowers and fruits come, you’ll share them with everybody you know and even with those you don’t. And they’ll plant the seeds and grow more fruits and flowers and share those with everyone they know and even those they don’t…

It’s funny because we live in a very very small town. You could walk one end to the other in under a half hour, probably. But we have a towpath! It goes beyond the town to the North for miles and miles through other towns, and it goes below the town for miles and miles through other towns and cities, along other rivers. I know this because I have seen it with my own eyes! You always have the feeling that you could just walk and walk forever, and discover new places. It’s McElligot’s towpath. Once you travel down it, you never know what you’ll find! But for over a month it’s been hard to walk, because of snow and ice and general treacherousness. It makes the town feel so small. It makes me long for spring, when we can explore again, and find all of the secret fields and valleys that the towpath leads to. All of the Hopes. And David just said he saw a bluebird on the way home from work!

I made these on Valentine’s day for a Special Meal. I wanted something main coursey and steaky but still, obviously, vegetarian. So I made these, and I served them over a sort of pilaf of rice and farro cooked with annatto oil and smoked paprika. And we had cauliflower puree, and some kind of sauce, but I can’t remember which one. And that’s that!

“Would you rather have one weakness nobody could detect, or no weaknesses at all?”

“No weaknesses at all.”

“No, would you rather have one weakness nobody could detect or no weaknesses at all?”

“Well I just don’t see why anybody would want a weakness if they could choose to have no weaknesses.”

“If you have a weakness and you wish to get rid of it, then you’re not yourself any more! Your weakness is part of who you are!”

These are the wise words of our Isaac, eight years old. At the beginning of the year when getting-to-know-you exercises abound, Isaac brought home a self-portrait with bright blue eyes, and on the bottom he wrote that his blue eyes and his heart murmur make him special. He’s got a heart murmur he won’t grow out of, and when they first diagnosed it, he thought it might be a defect, but now he’s embraced it as something that makes him different, something to be proud of. After all, there’s nobody on earth with a heart like Isaac’s! I love to think about Isaac thinking about these things. I love to think about him thinking about what makes a person a person, and thinking with such grounded generosity about the weakness that everybody on earth must inevitably have. Of course a weakness is a vulnerability, which is why we keep our weaknesses as secret as we can, and we hope that no one will detect it. Unless we love somebody, and then we open our hearts to them, and trust them with the knowledge of all or our weaknesses and foibles; we share our good and our bad. This takes great courage, but it turns weakness into strength, and Isaac does this better than anyone. He shares his remarkable thoughts, his uncommon contemplations, and his unguarded love with a warmth and wisdom that make him as strong as anyone I know.

I have a terrible weakness for ice cream! We’ve been snowed in so many days that I’ve been baking through bag after bag of flour. On one day I made croissants and biscotti, both from Craig Claiborne’s New York Times Cookbook. We changed the biscotti recipe slightly, because Malcolm wanted to add almonds and chocolate. So we added some almond extract, too, and a pinch of cinnamon. They turned out nice! In order to coat one side of them with chocolate I devised the ingenious method of placing chocolate chips along one side when they’re returned to the oven for the final ten minute drying-out period, and then spreading the chocolate once it softened. I think I might have baked them slightly too long, because they were extra crumbly when I tried to slice them, but we put those crumbs to good use! We took any of the half-pieces and mangled pieces and tiny pieces, and we ground them up even further in a food processor with some bittersweet chocolate chips, and we added them to raspberry ice cream. (Wintertime raspberry ice cream, with framboise and raspberry jam rather than fresh raspberries). This turned out deeeeeeelicious!

Dear Sir and or Madam: I am writing to apply for the job/ the grant/ the fellowship/ or to submit a story for publication. I realize that roughly a million other people are applying for the position and that they’re at least as skilled and qualified as I am, and all just as passionate about attaining the position/grant/fellowship/publication. I realize that I have absolutely no qualities to recommend me over these other million people, and that they’ve probably graduated more recently with higher honors, and have probably worked in the field some time in the past decade, as I have not done. They probably have more powerful friends to recommend them, more scintillating personalities and better networking skills. They’re probably better at ironing their clothes, being team players and using the latest computer programs. They probably smile more often and more convincingly, they’re probably bubbly. They’re probably effervescent. However, I hope you will take the following information into consideration when making your final decision: My dog really likes me. No, she hasn’t told me so in so many words. She hasn’t put it in writing, and I can’t give you her contact information so that you can determine the veracity of my statement. But it’s true, I tell you! You should see how happy she is when I come home from work or even from a walk around the block. She leaps! She sings! She wags her tail so vigorously you’d think it would fall off! If I’m in the house, she’s likely to be near by me, and I’m fairly sure it’s not just because I’m always eating or playing with food. When I sleep, she’s always practically on top of me, and when I wake and come downstairs, she does too! Sure, she likes everyone she meets, and I can’t guarantee that she likes me more than anybody else, but it’s not a contest, is it? Oh, it is. It is a contest. The whole world is a competition. I see. And maybe everybody’s dog loves them as much as I think she loves me. It’s probably true, I understand. I’ve decided not to attach my resumé, because despite a promising beginning and lots of opportunities, it seems to taper off somewhere in the middle and the last decade or so is frankly… Well, instead I’ve attached some pictures of my dog! And proof that she has her license and rabies shot! If you need any more information about her, or would like to set up an interview with her, just let me know! She won’t mind, she loves meeting new people. She’ll tell you all about how good I am at going for walks and napping and putting kibble in her bowl and singing every song ever written as if it was about her. Well, she would tell you if, you know… In summation thank you for your consideration, and I hope you’ll look at this whole process from my dog’s point of view, if only for an hour or two.

We’ve had more icy weather, the boys are home from school for the second time in three days. It’s a long long winter. I felt like eating something plump and savory and comforting, and that’s just what these little dumplings are. They’re fairly simple: kale, spinach, butter beans and cheese baked in a crispy crust. Obviously, they aren’t steamed yeasted dumplings, and they’re probably not officially dumplings in any sense of the word, but that’s the name that their shape suggested to me.

It may well be that you reach an age when you’re too old to say, “When I grow up.” And I undboubtedly passed that age many years ago. But I believe that I’ll never outgrow the feeling of “when I grow up.” I’ll never outgrow the idea that someday I’ll finish a novel or make another movie or have a career or even a steady well-paying job. I love when the boys talk about what they’ll be when they grow up. It’s so hopeful and nonsensical, sometimes, but possible and practical too. They can be whatever they want to be. Isaac might be an inventor who makes robots and toys and Halloween decorations, and Malcolm might be a mechanic who develops a floating car that doesn’t hurt the environment. There’s no reason in the world these things won’t happen if they really want it too. And I know they have time to figure it all out, and I look forward to watching them puzzle through it all. Of course at my advanced age the possibilities are much more limited. I’ll never invent a floating car. Sigh. I’ve come to terms with that fact. I have a long path behind me with turnings I didn’t follow. I have a recurring dream about clothes. In the dream I discover that I have closets or cupboards full of clothes that I’ve never worn or that I haven’t worn in ages. I’m excited at first to have new clothes to wear, but upon closer inspection I find that they’re dusty and filled with moths and weevils. They’re unwearable. I think this dream is about my career, or lack of one. It’s about foolish decisions and wasted opportunities and squandered potential. It’s about waking up to discover that you’re forty-four, and things haven’t worked out the way they were supposed to. But I have another recurring dream and in this dream I make a film. Sometimes I shoot the film in the dream, and it all falls together with the ease and oddness of dream logic. Sometimes I find footage I shot at an earlier time, and it’s perfect, beautiful footage, and in my dream I have a revelation of how to edit it all together, I know exactly what I need to add to complete the film. I had this dream twice in one night this week, and I woke up feeling so happy and hopeful. The line between films and dreams is so slight and easily blurred. And maybe this means that I’m working on something good. Maybe it means I have beautiful ideas in my head that have been there all along, and I just need to discover them and put them together. The memory of dreams can shade your life for days, but maybe it’s time to step out of these dreaming shadows, maybe it’s time to wake up and live! When I grow up…

This savory pancake recipe is loosely based on one I found in Madhur Jaffrey’s World of the East Vegetarian Cooking. I added a few things to make it easier to cook the pancakes, and I added different spices. These weren’t hard to make at all, although you have to plan ahead and soak the peas. Malcolm loved them, and Isaac thought they were a little strange, (which, admittedly, they are) but he ate them anyway. They seem like they must be full of protein! They have a nice, unusual earthy taste. Everybody liked the curry, which is smooth and full of flavor.

I think I had a big stupid smile on my face the entire time we watched Melody. Why the big 103-minute idiot grin? It wasn’t because the movie is sweet, although it certainly is. Nor because it is a happy movie, although in many ways it’s that, too. It was because it just felt so perfect. Everything about it was exactly as it needed to be. I could imagine the filmmakers watching the dailies and brimming over with gladness that they’d captured the shots they’d captured, and then adding just the right soundtrack, editing it perfectly, and sitting in the dark, full of joy, watching the finished movie. It’s an odd film in many ways. It’s called Melody, and it tells the story of a sweet sort of romance between Daniel Lassiter and Melody Perkins, but it’s almost more focussed on Daniel’s friendship with the kind but unruly urchin Ornshaw. Daniel is a child of relative privilege and Ornshaw is not, and the film reminded me of Machucha in that their friendship seems unexpected and almost discouraged, because it crosses certain unwritten boundaries; boundaries that adults create between certain types of people, boundaries which make no sense to children, but which they learn to honor and fear. And although the film is exceedingly sweet, it’s never saccharine. It’s too real for that. Apparently it’s Alan Parker’s first film script, and it’s beautifully told. The story unfolds in small meaningful moments, just like real friendships, just like life. We see spells of loneliness, moments of connection, misunderstandings and disappointments. When Melody and Daniel first spend any time together, they don’t really talk at all. She plays Frere Jaques on her recorder, and he joins in on his cello. They don’t play particularly well, but it feels as though they’re happy to be talking to each other. Like everything else in the movie, it’s the messiness and imperfection that makes the scene so beautifully human. Nothing is over-told, or too carefully explained, and we feel like we’re just watching the world from Daniel’s point of view. The camera catches the expressions of the people around him, and though the adults are almost grotesque, often cruel, and never capable of the clarity of thought that the children achieve, we still feel a certain affection for all of them. But why must they complicate everything? Why can’t they see how it should be? And though the film is sweet, it’s also anarchic, almost surreally so towards the end, in a scene that reminded me of Vigo’s Zero for Conduct. I think part of the reason that Melody made me so happy is that I’d never heard of it before about a week ago. It’s been around since 1971, and I had no idea it existed. It feels like a discovery! I found it because I’ve been obsessed with Nina Simone’s version of the song In the Morning. It turns out the original is by the Bee Gees (the Bee Gees!) and is just part of the ridiculously addictive soundtrack to this film. I love all the songs! Who would have thought? I love it all! I wonder which other films are out there, waiting to be discovered?

Here at The Ordinary, we call these tarts “Dormouse pies.” Because they contain dormice? Certainly not! Because they were inspired by the hazelnut and blackberry diet of a dormouse. They have a shortbread crust, a layer of jam, and a crunchy top layer of nuts and chocolate. I made two small tarts, one with blackberry jam, fresh ripe pears, hazelnuts and bittersweet chocolate and one with strawberry jam, almonds and bittersweet chocolate. They’re both very good. Very very, dangerously good. I made two 6 inch tarts, but you could easily make one 10 or 11 inch tart with these ingredients, I think.

The other day on the way to school Isaac said, “You know how we’re supposed to be as jolly on Christmas day as Clio is every day?…” as if it was a truth, universally acknowledged, a rule that we all accept. He is, of course, speaking of Clio’s tendency to love everybody she meets, even if they’re complete strangers (unless they’re wearing hats or sunglasses. Very supsicious! Very suspicious! What are they hiding?) He was talking about the fact that she makes you happy because she’s so happy to see you. She’s so easily pleased with small things…walks, a bowl of kibble, a warm lap. She’s not afraid to show she loves you, and this makes her nice to be around. Isaac’s kind of like that, himself, all year long. And so, in the light of all this Christmas Jollity, I’d like to propose a new business plan, based on this: “Business!” cried the Ghost, wringing its hands again. “Mankind was my business. The common welfare was my business; charity, mercy, forbearance, and benevolence were all my business. The dealings of my trade were but a drop of water in the comprehensive ocean of my business!” According to the specifications of my new business plan, the curriculum of our business schools will change somewhat. We’ll have courses examining the philosophical and practical applications of charity and generosity. We’ll learn how to combat ignorance and want. We’ll learn to share what we have and we’ll learn that we don’t want more than we need. Internships will be at shelters and soup kitchens or anywhere that people are in need of aid and support. Business acumen will describe the ability to sense when a person needs kindness or encouragement. Big business will mean that everybody is acting together as a community of epic proportions to spread happiness and good will. And even when we mind our own business, we’ll be minding the people around us, because they are our business! And business as usual will be benevolence, jolliness and cheer the whole year long; the whole year will be “a kind, forgiving, charitable, pleasant time; when men and women seem by one consent to open their shut-up hearts freely, and to think of people around them as if they really were fellow-passengers to the grave, and not another race of creatures bound on other journeys.”

It’s a crepe stack!! It’s layers of peppery crepes sandwiched with romesco sauce, roasted mushrooms, sautéed spinach, and ricotta mixed with mozzarella, eggs and artichokes. I thought it was very tasty…lots of nice flavors together. It looks quite complicated by it’s really not hard to make. You can, of course, alter the fillings that you use, and put anything you like in between the crepes. You could also make this as a lasagna, layering all the fillings between cooked lasagna noodles, if you don’t feel like making the crepes.

I spent the morning cleaning and thinking about James Baldwin. I’m reading Go Tell it on the Mountain, and it’s such a strange combination of instantly powerful and hauntingly beautiful. The scenes and sentences that stay in my head aren’t the ones I expect, the passages I find myself instantly re-reading and then reading again are not the most dramatic passages. They describe in-between times, times of working and waiting, and they’re so thoughtfully observed and beautifully expressed that they make the book human and honest and real, and make it something greater than that as well. And I spent the morning cleaning, as I spend most mornings cleaning, to try to fight the creeping dust and dirt and chaos. But you can’t tell that I’ve been cleaning, you could never tell, because I’m not very good at it and for whatever small part I clean, the rest of the house is conspiring to coat itself in dust and clutter all around me. And it does feel like a waste of time, sometimes, except that you can think about James Baldwin while you do it, and even think that he’s had the same feelings about it.

    To sweep the front room meant, principally to sweep the heavy red and green and purple Oriental-style carpet that had once been the room’s glory, but was now so faded that it was all one swimming pool of color, and so frayed in places that it tangled with the broom. John hated sweeping this carpet, for dust rose, clogging his nose and sticking to his sweaty skin, and he felt that should he sweep it forever, the clouds of dust would not diminish, the rug would not be clean. It became in his imagination his impossible, lifelong task, his hard trial, like that of a man he had read about somewhere whose curse it was to push a boulder up a steep hill, only to have the giant who guarded the hill roll hte boulder down again–and so on, forever, throughout eternity; he was still out there, that hapless man, somewhere at the other end of the earth, pushing his boulder up the hill. He had John’s entire sympathy, for the longest and hardest part of his Saturday mornings was his voyage with the broom across this endless rug; and, coming to the French doors that ended the living room and stopped the rug, he felt like an indescribably weary traveler who sees his home at last. Yet, for each dustpan he so laboriously filled at the doorsill demons added to the rug twenty more; he saw in the expanse behind him the dust that he had raised settling again into the carpet; and he gritted his teeth, already on edge because of the dust that filled his mouth, and nearly wept to think that so much labor brought so little reward.

Well, as I scrubbed the bathroom I thought about how I’ve written about dust demons, and I’ve written about cleaning and Sisyphus! And I thought how foolish it is to feel good about having written about the same things in the same way as James Baldwin, how foolish it is to compare myself to James Baldwin at all, except that he makes everything feel so human and at once so specific and so universal that everybody reading him must find revelatory similarities and sympathies. I started reading Baldwin, at this time, because I’m writing a novel (insert laugh-track hilarity here.) And I always believe that if you read well, you’ll write well. I was hoping that some of Baldwin’s fierceness and honesty and fearlessness and poetry would rub off on me. And I happen to be writing about a person who cleans (yes it is going to be as interesting as that sounds!) It’s funny how sometimes something well-done can be inspiring, but if it’s so well-done it might make you think, “Why bother? Give it up, kid!” But I suppose, as in all things, there’s a balance. And for now I’m just grateful that Baldwin made it to the end of the rug and left the room, and found time to write this haunting and beautiful novel, to give this hapless woman something to think about on a dreary January day.

I love food you can eat with your fingers and dip in different sauces. I always pretend I make a meal like this for the boys, but it’s really for me. David asked me to make romesco sauce, which I was glad to do. Since romesco sauce is Spanish, I decided to invent tapas to dip in it. I made these croquettes with semolina, artichoke hearts and mozzarella. They’re like little semolina dumplings…soft and dense inside, and crispy and puffy outside. As ever, I used canned artichoke hearts that are packed in brine, but you could use fresh or frozen if you like. I also made oven-roasted fries to dip in the sauce, and I sauteed some kale and spinach with golden raisins, pecans and garlic, which might have been my favorite part of the meal!

I’ve said again and again that I don’t accept society’s definition of success. I’ve gone on and on explaining that I don’t always value what we’re supposed to value. I like to try to maintain my own definition of what makes a person successful and therefore happy, of what is worth working for. But let’s face it, sometimes it all comes crashing down around you, sometimes it’s just too much effort to think the happy thoughts that keep you aloft and the pixie dust wears off. And then you feel discouraged. I’m sure it happens to everyone, it comes and it goes. But discouragement is of no interest to anyone, so I’ll give you this instead.

It’s dancing songs, songs about dancing or songs that make you feel like dancing. It will help us all get through these dull grey January days.

And here’s a roasty juicy soup with nice plump butter beans in it and a good dollop of pesto on top. Not hard to make and very tasty. The boys ate it with pasta, as a sort of sauce.

Quince, chocolate and hazelnut cake

On the way to school we passed a tree full of crows. When we startled them they took to the air, bright and noisy. More crows than would seem to fit in the tree, more crows than I’ve seen together at one time. Black and significant and beautiful. They flew over the rooftops and settled in a tree on the next block, and I scared them up again on the way home. I thought I might spend the day following a flock of crows and setting them off, into the cold clear air: a hoarse and raucous ruckus. What were the crows talking about? The weather, I expect. Like everyone else in this part of the world, they were discussing the cold. It’s cold. Not unseasonably, not unprecedentedly, not unexpectedly, to be true. But remarkably cold, and we’re all talking about it. I don’t mind it so much, because it feels clean and pure, it feels like a way to start anew when things come back to life. I don’t mind it so much because I’m lucky enough to have shelter and warmth, and I’m not sorry for an excuse to stay inside, sheltered and warm, baking and writing, if only for a day or two. And this brings us to your Ordinary phrase for the day. That phrase is “tuck in.” As you may recall, Isaac wanted to try taking care of somebody a week or two ago, and as part of the game he tucked me in with two pillows and two blankets. I’ve been thinking ever since about how good it is to be tucked in by gentle hands, how nice it is to be made warm and safe. Such a simple gesture, but such a rare feeling of comfort and happiness, such a memory of childhood, such a dreamy feeling that everything will be okay. Of course, “tuck in” has another meaning that appeals to me as well, especially in this weather, and that is to eat a meal. I always imagine it to be a big, hearty, warm, festive meal, in a scenario that involves tucking in. According to my beloved OED, “tuck” also describes the food itself, as well as the appetite one needs to eat it. You might find, “ten or twelve of these little bowls on the table, each with a different kind of ‘tuck’ in it.” You might have a friend who “being inclined for a tuck out, repaired where he was likely to meet with oysters.” We might “have a solid, staunch tuck-in,” all together. You might, “steal out at night from your dormitory and take tins of sardines from your tuck-box.” (I want a tuck-box!) And finally and best-of-all, you might aspire to the earn the label “tuck hunter,” so that it can be said of you that “Nothing can stop the mouth of a tuck-hunter.” And so it is my hope for all of my Ordinary friends, far and near, that however cold it may be outside, it is warm and cheerful inside, and that we all have some fine warm tuck to tuck into, or some gentle warm hands to tuck us in.

Quinces! I love them! The smell of them, the taste of them, the very idea of them. They’re quite rare around here, and a little pricey, so I always buy very few of them and then save them up till they’re almost past-it, while I wait to think of something special to do with them. This time I decided to make a cake. I cooked the quinces until they were soft. Then I cooked them with sugar, and a bit of clementine zest and juice and some vanilla extract. until they were thick and jammy. I used this, in concert with some bittersweet chocolate chips, as the central layer of a cake with hazelnuts and a bit of sherry. It’s almost like a gateau basque, except that the cake itself is a little different, a little thinner and softer.
