Pumpkin and black bean empanadas

We went to the Princeton art museum this week. In the downstairs rooms, they have sculptures from all over the world – from Japan, China, the Pacific Northwest, Ancient Rome, Ancient Greece, Ancient Egypt, Mayan, Incan – the room is full of spirits, pinned and labeled and living behind glass. Beautiful monsters that protect tombs, strange animals that protect the home or the harvest, odd creatures that have some function inexplicable to us today. The place is buzzing with life and mystery. My boys were very inspired! Malcolm has been drawing spirit wisps, spirit goblins and spirit angels for days. He told me that he sees spirit wisps all the time when we drive through the countryside on dark nights. They appear as flashes of blue in the trees. As I’ve said in the past, I love the idea of spirits, and I see spirits everywhere, so I’m delighted by the sight of the boys next to each other on the couch, bent over a table, scribbling furiously in little books and describing the powers that the spirits have. Inspired by totem poles and masks of the pacific northwest, and by the time of year, Isaac drew this pumpkin man. He’s made up of faces!

Pumpkins are so perfectly suited to legend and myth. And they’re so delicious! They’re among my favorite foods. And empanadas are among my favorite foods. So together…well, it’s a perfect combination. I really loved these. They’re seasoned with sage and sweet spices – cinnamon, nutmeg, allspice and ginger. They’re comforting with melted cheese. They’re crispy with a masa harina crust. I made a zingy tomato sauce to go with them, spicy with jalapenos, and tart with lime.

I feel strangely excited, and of course I’m going to tell you why. It has to do with the election. Wait! Wait! Don’t tune out! I’m not going to tell you about my humble beginnings and how I love America more than anybody else does, and I’m not going to ask for a small donation. It’s a little hard to articulate, but I feel genuinely hopeful about this. It seems to me that, in some way, the needs of the people – the very human needs of all the people – is shaping the rhetoric of the election in a way that I don’t remember happening before on this level. (Of course that might be because my memory is full of holes and I’m politically dumb as a bag of flour.) Feminists have talked for decades about the personal being political, which is an idea that I embrace. This election cycle, (as they call it, which also makes it seem human and part of nature, somehow) it seems as though all of the politicians are struggling to connect with us by making the political personal. Maybe it’s the healthcare debate. Whatever your feelings on the subject, I think everybody agrees that healthcare is about us at our most human and most vulnerable. Of course it’s also about insurance companies and corporations, but at its most crucial, it’s about our life and our death, our bodies and our well-being. I think it’s hard not to become emotional when we consider this issue, which makes it difficult to discuss rationally, perhaps, but it’s important for us to learn this form of discourse – to learn to talk about personal emotional subjects. Maybe it’s because times have been so hard for all of us. We’re all hurting, and it makes us more insular, for better or for worse. We’re anxious about our homes, and our ability to keep them. We’re thinking about the food we put on our table. And this election is about women. We’re told over and over that the women are going to decide this election, and that’s forced a (sometimes uncomfortable) discussion about women’s bodies, and women’s work, and the value of that work. Of course, everything’s intimately connected. The “serious” issues of war, taxes, foreign policy – they’re all ultimately personal, they’re about our daily lives, our loves, our families, the chance to follow the path to old age that we all travel together. I always have this feeling, when I listen to politicians talk, that there’s a truth and sense that they can’t tell us with their words, that we hear anyway. Sometimes they try to hide it – when they tell us we need to go to war, with a barrage of words and falsified facts, I feel like most people understand the truth anyway – we know their motives. This year I feel the sense is closer to the surface under the muddle of words – the sense that we’re all in it together, and we’ll learn a way to talk about that.

Since the food we put on our table is an important issue, i’m going to tell you about this handsome tart! It’s actually quite simple. It’s a standard flaky pate brisee crust, with rosemary and black pepper added for deliciousness. On top of that we have a layer of french lentils sauteed in port wine and balsamic vinegar. Lentils might seem like an odd ingredient in a tart, but they add real substance and texture, and their lovely meaty flavor. And the mushrooms are chopped chunkily and roasted, so that when the savory almond custard is baked all around them, it’s almost like a savory clafouti or toad-in-the-hole. If I do say so myself, and I do, the whole thing turned out super-tasty. David liked it a lot, and said it’s a “birthday meal.”

Beet carpaccio with warm goat cheese, pecans and sage

Remember the Chekhov play The Three Sisters, in which one of the sisters longs to go to Moscow? It’s a theme! Well, here at The Ordinary, for the past few days, our Moscow has been the secret path that leads to the secret path on the other other side of the towpath. If you think I’ve mentioned it before, it’s because I have, and that’s because IT’S ALL I’VE HEARD ABOUT FOR DAYS NOW!! When will we go? Why can’t we go? Why shouldn’t we go just because a storm is raging around our house? On the very first day of summer vacation, way back in the glowing, hopeful, anticipatory month of June, Malcolm and I happened upon a small winding path that branched away from the towpath. He was ecstatic! We ran through it, leaping fallen logs, stooping under trees, racing through light and shadow. He’s wanted to return ever since, but with one thing and another, we’ve never made it back. Lately his yearning has reached a fever pitch, so today we braved spiders, ticks, stinging nettles, poison ivy, mosquitos and impending thunderstorms, and set out on our journey. (Who is an anxious mom? Who is?) It’s quite a long journey, as the Isaac walks, but it was worth it to see how happy the boys were. After a night of rain the ground was muddy, the leaves sodden and fragrant, the creeks fast-flowing. In June all the green things were small and pale and bright, but today they’re lush and dark and overtaking all the paths.

Malcolm looked for the spider sitting on a milk jug, that he’d seen in June, and was surprised to find the jug buried in weeds, and the spider gone. Isaac had heard of this milk jug! He was excited to see it. Isaac jumped off of a huge log, and said, “Mom, did I hop like a toad?” Yes, you did. “I toad-hopped it!” They climbed a tree in the strange wet palely glowing light, they hid in a hollow of vines and branches. Isaac asked about each thing Malcolm had described to him – the vine to swing on, the stump to jump off of, the dead tree to crawl under, and Isaac could never be disappointed by any thing that Malcolm showed him. The late-summer smell of wet steaming earth was all around us, and I can’t smell that lately without craving beets. I know that’s odd, but there it is!

Funnily enough, we’d eaten this beet carpaccio the night before, and I’d remarked that prepared this way, beets didn’t taste like dirt. Huh? Asked Isaac (he’s a small boy, dirt is his medium). I’d replied that beets grow in dirt, so they taste like dirt, but in a pleasant way. In this carpaccio, however, they were juicy and sweet. This couldn’t be easier to make, and it’s very delicious. The boys loved it!! I love goat cheese with beets – sweet and juicy meets a bit of creamy tartness. The pecans added crunch, and the sage added depth.

Red beans in red wine & tamari sauce, with roasted mushrooms and potatoes

Nobody stands on the beach getting teary-eyed over the sea birds. That would just be silly. Certainly I would never do that! This week when we were at the beach, I saw something I’ve not seen in many decades of beach-going. The seabirds followed a school of fish so close to the shore that the lifeguards pulled everyone out of the water. The birds frantically ate, circling and calling – two kinds of terns, two kinds of seagulls, farther out large brown pelicans. Small silver fish leapt through the waves, where we had just been swimming. The dolphins had been following the fish, too, but they didn’t swim in as close to shore. It was a dizzying spectacle – the sun white bright on the sand, the horizon heaving and changing with each wave, the birds wheeling in fast flowing arcs, blurring your vision. I found it incredibly moving. The ocean moves me, anyway…literally, with each wave that sweeps me off my feet, high above the sand, and then sets me down again, where and when it chooses; and emotionally, with its vasty vastness and beauty and mystery. Somehow seeing the sea birds made me more aware of just how unaware we are of the life in the ocean. Their frenzied activity hinted at the world in the waves, but we’ll never know what’s in each smoky green swell of water, and what’s living where there are no waves, where the ocean is deep and dark. The birds know…they seemed to sense, as a group, when it was time to move on. (And it just killed me, that in the midst of all of this activity, a handful of gulls stayed apart, floating cooly on the water, not bothered at all.) By contrast, the humans on the beach suddenly seemed endearingly foolish – with our garish colors, our strange skin, our beach chairs and umbrellas and toys and snacks, our lumbering movements into and out of the waves. (I say this as somebody who gets knocked over by 2 feet of water!) We think we know, we think we’re in control, but we have no idea. I love that moment of recognition – I HAVE NO IDEA! – but it’s frightening as well.

And, of course, you love the birds and the dolphins, but you feel a little bad for the small silver fish, leaping through the waves. It’s the unavoidable cycle of life for the birds and the dolphins, but not for me, so when we got home, I cooked up some beans. But these are very very special beans!! They’re in a sauce made with red wine, sage, rosemary, and tamari. It’s a very savory, meaty, delicious sauce (umame-y?) I made it quite brothy. I served it over millet (we love millet!) which I’d made with the same broth that’s in the sauce, and I roasted some mushrooms and potatoes to mix in. I’d thought about cooking the mushrooms and potatoes with the sauce, as a sort of stew, but I really like them best when they’re crispy and flavorful, so this is how we did it. We topped the whole thing with fresh smoked mozzarella and fresh basil from the garden. A simple salad of baby arugula and walnuts was the perfect crunchy bright accompaniment, and a good loaf of crusty bread was on hand to sop up the juices. The broth was the star of the show, and I will make it again! But Isaac loved the beans, and ate them very sweetly one at a time, between spoonfuls of millet.

Chickpea & black bean tacos with pumpkinseed basil sauce

I’ve moaned many times about the death of American Independent cinema. The way I see it, the thrilling golden era of the seventies and eighties (Jarmusch! Lee! Sayles! Hartley!) gave way to an era of derivative, overblown hollywood-wannabes. American independent cinema is dead – killed off by two clever young men who made flashy little hollywood movies, and by the generation of filmmakers following them, whose knowledge of film history went back no farther than these clever young men. Independent filmmaking became an industry – the films were products, the filmmakers wanted to be stars. But the films were like fast food, at once too much and too little – insubstantial and unsatisfying. Rather than carry on with this cantankerous whinge, I’ll tell you that lately I’ve been very excited to discover that American independent cinema is alive and well – it’s just not living in North America.

We’ve watched a number of films lately from Latin America that give me so much hope – engagingly human, unforgettable, and inspiring. Despite being low-budget, and not containing celebrities, each of them achieve some level of perfection of production that I find thrilling. Acting, camera work, music, writing – all carefully combine to make films that glow on the screen, and in your memory. All of the films share a quality that made them especially dear to me. They are ordinary – stories of ordinary people, of their day-to-day-life, of the food they make, their mundane jobs, but they are so beautifully presented that they become extraordinary and compelling. Like a well-made meal, the films are simple, but the ingredients are exactly as they should be, and they’re sustaining and memorable.

I’ll tell you about a few! Duck Season has become one of my favorite films of all time. It’s the first feature by director Fernando Eimbcke, and it tells the story of two boys in a high-rise in Mexico. It’s Sunday, they’re stuck in their apartment, and the power is out. It’s a really ecstatic film, and we watched it twice in two days!

From Brazil, we have The Year My Parents Went on Vacation, by director Cao Hamburger, about a boy who goes to stay with his grandfather and develops an unlikely friendship with his neighbor. A perfect example of how attention to every detail of production can make a simple film resonate.

I’ve already mentioned Adrian Biniez’ Gigante, from Uraguay, because it inspired me to make pizza with faina! A lovely movie with an underwater glow about the lighting and the pacing. And Whisky, a disarmingly dry, touching, and funny movie from Juan Pablo Rebella and Pablo Stoll. The same directors made 25 Watts, a day in the life of three friends that’s low key, funny, thoughtful, and that you’ll think about long after you’ve seen it.

One more! From Argentina, the tale of a housekeeper and her over-bearing employer – Live in Maid, by Jorge Gaggero. It’s a quiet film, but the small telling details, which examine the routines that shape these two women’s lives, make them alive for us. The film is a very human and immediate way of describing what’s happening in the larger world of politics and economics.

All of these films are like little gems – it’s so wonderful to discover them. They allow you to travel to another part of the world, and give you such an intimate glimpse of the people that live there, and do so with such generosity, humor, and subtlety, that you feel fortunate to spend some with them.

Your song for today is from Lake Tahoe, another remarkable movie by Fernando Eimbcke. The song is La Lloroncita by Los Parientes de Playa Vicente, and it’s gorgeous.

And your meal for today is tacos made with black beans, chickpeas, yellow squash and corn. Everything is combined in a sauce of pumpkinseeds and fresh basil – a sort of pumpkinseed pesto, but lighter. We ate it with warm tortillas, chopped tomatoes, avocado, romaine, and grated sharp cheddar. I have to admit that it’s a little funny-looking (David laughed when I brought it to the table) but look beyond that! Because it tastes very good! Sweet, savory, a little smoky, a little spicy.

Creamy zucchini, walnut, and white bean sauce (with sage)

One of my favorite lines from any movie is spoken by Ballou the bear in Jungle Book. “Fall apart in my back yard,” he says. It’s always seemed like such a tempting invitation. I’ve had a stressful week of cut fingers and a sick boy, making hard decisions about cut fingers and a sick boy (hard for me, anyway, indecision is my m.o.) trying to pretend I’m strong and that I’m not freaking out about everything when inside I’m a mess, and not sleeping much. Silly, I know, when taken individually, but it all added up to wear me out a little bit. So last night I spent a little time in my own backyard, in the the dark, cool evening, just enjoying the soft sounds of summer-night bug flights and the smell of the herb garden and yesterday’s fire. And then I saw a face in the witch hazel bush! Not as if somebody was standing there, but as if the witch hazel itself had a face. Two kind, softly glowing eyes in a dog-like face. I sat and stared at it a long while. I moved to another seat, and it was still there. I like to think about spirits all around me. When I clean the bathrooms (remember that I have two little boys!!) I always imagine a pee spirit living behind the toilets. A mischievous noisome yellow blob of a spirit, that I angry up when I bleach his home. I’ve always seen faces in tree trunks, and in stones, I see dog’s eyes and noses in knots in planks of wood. I swear it sometimes seems like everything has a message to tell me. And then, of course, there are the fireflies. (Fireflies and zucchini, again!?! Yup.) I love our witch hazel bush, with its wintertime flowers like fragrant fireworks. I felt oddly comforted by the idea of a witch hazel spirit. I sat for a long while, reluctant to go up to bed despite being exhausted, and thought about spirits. I finally went inside and locked everything up, and turned out all the lights, and through the window I could still see softly glowing eyes in the witch hazel.

If there was a spirit in our back yard, I imagine it would eat the sage in our vegetable garden, because sage seems like good spirit food. Well, I harvested some myself to make this pasta sauce. This is a good quick-meal-after-work sauce, and it’s a good way to use up some of my over-abundance of zucchini. The zucchini is blended with white beans, walnuts, and broth to make a thick and creamy, though cream-free sauce. I used the broth from the millet stew I’d made, and it was very flavorful with sage and bay leaves, but you could use any broth you have on hand, or even water. I also used caramelized onions, because I’d made a huge batch over the weekend (and cut my finger!) but if you don’t happen to have them lying around, a shallot or a regular onion would be fine. And that’s all I can say about that at the moment because Malcolm is desperate for the computer.

“People talk of natural sympathies,” said Mr. Rochester. And we all know that he was just trying to seduce Jane Eyre, but he wasn’t wrong – people do talk of natural sympathies. Not just between people, but between colors, and musical notes as well. Certain things just look or sound pleasing when they’re combined. The boys have a book on the history of perspective in art, and I find it so fascinating! Artists through the ages have tried so hard to understand the world through mathematical rules – they understood it in order to draw it, and they understood it by drawing it. (Which is what little Isaac does, it seems – when something interests him he has to draw it, and he’s always pleased with what he draws) Apparently Paolo Uccello would stay awake at night after his wife had gone to bed, searching for vanishing points, and he’d say, “Oh, what a a sweet thing this perspective is!” And Piero della Fransesca believed in a perfect geometry underlying God’s creation. He saw everything as defined by measurements and numbers, which had mystical properties. Everything was carefully planned, in his art and in the world around him to be pleasantly harmonious. David, who is a painter, will point out how certain colors “hum” when they’re next to each other. Some even create a beat when placed in proximity – almost a flashing in your vision. My piano teacher, who was also a painter, used to say that each painting should have one “key note” color, which stood out from all the other, and didn’t harmonize with the rest of the picture. I think it’s interesting that the visual world is spoken of in musical terms, what with all the humming and the beats! I asked my mom, who is a professor of music history, if people believed certain chords together had magical powers. Oh yes! She said. People used to believe that you are what you listen to, and that you could be driven to certain actions – saintly or diabolical – according to what you heard. Octaves and fifths were pure and safe, but the tritone was the devil in music, and could cause terrible unrest. She said that if you took perfect fifths, and sang them perfectly in tune, by the time you got four octaves up, you’d be a half-step flat. People used to develop all sorts of tunings to solve the problem (well-tempered tuning) and now we use equal temperament tuning, in which we adjust by making everything equally out of tune. “In order to end up on pitch you have to compromise everything else,” Says my mother, “Just like in life.”

Well, I believe that there are certain flavors that go together perfectly, as well. When you taste them they just make sense, and they hum in your mouth. Frequently they grow together and ripen together, which almost makes you agree with Piero della Francesca’s assessment that there’s some divine pattern accounting for all of the harmonies in the world. Tomatoes and basil, for example. Perfect. And I like to think about my piano teacher’s idea of introducing one element of flavor that’s surprising and unexpected, and makes all of the other happily harmonizing flavors more exciting. Some flavors hum along together, some contrast pleasantly, to create a beat. Personally, I love chard and french lentils together. And I love chard and some sweet and tangy fruit. And I love them all together in a crispy crust. I really liked these empanadas! It’s one of my favorite meals I’ve made in a while. I combined chard, which had been sauteed with a bit of garlic and hot red pepper, with lentils, which had been cooked with nigella seeds and sage. I added some caramelized onions, for sweetness. And I added a spoonful of quince jam. I used queso blanco & mozzarella to make everything nice and melty, and bring it all together. I’d read that in argentina they make empanadas with quince paste and salty white cheese, and I guess this is my version of that. We ate these with my version of patatas bravas, which I’ll tell you about in a little while, and, I’m not saying it was a masterpiece, or anything, but it was very pleasing meal to have in out little green backyard on a cool summer evening.

Ever since the last time, I’ve been thinking of quotes to use this time. The last time, I chose the quotes at random, and was curious to see how they made connections with each other. This time, I’ve chosen quotes that have been stuck in my head one way or another over the years. And one from the book I’m currently reading. And here are some tacos to use up some of the beets and zucchini you got from your CSA/garden!” – Claire
I was excited all day about making (and eating!) this. I bought some queso blanco at the grocery store. It’s something I’ve wanted to try for ages, but it’s a bit of a splurge. It wasn’t universally popular in my family. I like it – it’s mild, and salty. If you have feta, that would work well, too (it goes nicely with the earthy sweetness of the beets.) And, actually, grated jack or sharp cheddar would be tasty in this as well! I thought this turned out really pretty – the beets go so nicely with the dark kidney beans, and they color everything around them, but there are flashes of green here and there to set them off. The flavors were nice – smoky, spicy, sweet. The recipe calls for cooked rice. I definitely recommend basmati or something else with distinct grains – anything else would make the mixture too sticky. Wild rice or black rice might be even better! I just made a big pot of basmati, mixed some in, and left some separate for the boys, who like a higher rice to bean ratio. I think tacos are the most fun to eat! And the quickest and easiest to cook! I have some leftover beet/zuke/bean mixture, and I think it would make a nice bisque, if puréed with some good broth. Will I try it? I don’t know! It’s very hot, still!

Caramelized onion tart

You know how they tell you you’ll use pre-calculus when you grow up, but you highly doubt it? When I was in high school, I didn’t like pre-calculus much. I used to sit in class feeling queazy and thinking I might die from appendicitis. (I wish I was kidding!) The teacher, a small, dry man, took me aside and told me I couldn’t avoid everything that confused me. Ha! Proved him wrong! I’ve been doing that for over 40 years, and I pretty much never use pre-calculus skills in the real world. I took another class called Writing and Responding. I don’t think I’d be exaggerating if I said it was one of those classes that shapes your life. It was taught by Carol Lefelt, and I went on to do independent studies with her on Shakespeare, and (If I recall correctly) female poets. She was remarkable! Very questioning, very curious – contagiously so. In Writing and Responding, we learned how to respond constructively to other writers’ work. I’ve thought a lot, through the years, that some of these lessons I have used in real life, not just in responding to writing, but in responding to people! For instance, after reading a piece, you always start by saying a couple of things you like. Specific things, be they ever so small. This seems like such a simple idea, but I don’t know how many times I find myself thinking, “no, no, no…start with something nice, then get to the complaint.” I went to Malcolm’s second grade parent-teacher conference a few years ago. Before I’d sat down, before I’d even crossed the room, his teacher said, “Malcolm is all over the place! He breaks all his pencils!” And I thought, “What you really meant to say, surely, was that my son is so bright and imaginative, and he has so much energy …” And then get to the part about the pencils. Right? Another lesson – instead of saying you don’t like something, or that it doesn’t work, you ask questions about it. That way, the writer, in pondering your questions, will understand that they didn’t get their point across, that they’ve caused confusion instead of clarity. Wouldn’t that be nice? Instead of being scolded, to be asked a few questions that showed you the error of your ways. Another thing we learned, on the writing side, was not to worry about being ready to write, or knowing exactly what you’d like to write, but using the act of writing as a way of figuring that out. “How do I know what I think until I see what I say?” I like this idea a lot. And I’ve found it to be true. In writing, as in life, sometimes the less you fret, the better things turn out. Admittedly, this appeals to me, partly, because I’m a vague and lazy person. And, obviously, some things need to be carefully planned and plotted. You’re not going to build a cabinet, say, or a rocket ship, just slapping some things together and hoping it works. But other things – things that come from some part of your brain you’re not in complete control of, seem to work better when you just do them. You just let them evolve as they need to evolve. I think cooking is like that – for me at least. I’m not a fan of following recipes. I like to dream a bit about what would taste good, and then see what I have, and let it come out as it does.

So – we got some onions from the farm. It might seem odd, but this has been one of my biggest veg challenges to date. I like shallots, chives, scallions… I just don’t love actual onions. They’re too much! I don’t like the smell of them clinging to walls and clothes like some bad dream from a Tom Waits song. But I tried caramelizing them, and I think they’re quite nice. I followed Deborah Madison’s recipe to the letter (except that I halved it). If ever I were to follow a recipe, it would certainly be hers. She’s my hero! And I decided to put them on a big, pizza-like tart. With brie, capers, and artichoke hearts, and fresh sage and fresh thyme. Because I had all those things, and they told me they’d be good together! And they were! This was very easy, and very tasty. I used a buttery pate brisée crust, but you could use pizza dough instead, if you were in the mood.

Trumpet mushrooms and chard

It’s hot as hell, they’re doing construction on the house attached to ours, which apparently requires loud bad radio and lots of cigarette smoking, and the boys are trying to knock all the plaster off the walls and yelling about how mean I am. I’m going to give myself a time out.

Last night we started watching a film by Yasujiro Ozu. He uses these beautiful still “pillow shots” between scenes. They’re shots down hallways, of empty rooms, along an alleyway. They’re not entirely static – the camera is still, but there’s movement of light, or of people walking by, clocks ticking, curtains blowing. You sense that the story is playing itself out somewhere nearby. The shots are so cool, so quiet but not silent. I find them incredibly compelling. I’m a huge fan of stillness in films, and quiet moments. Whether they last the whole film long, or they form a small pocket in a louder busier film. I wish the word “moment” wasn’t overused in precious greeting cards and knick knacks and self-help-speak, because it’s such a good word. A few years ago I submitted a series of short videos to an online gallery run by the remarkable Peter Ferko, a New York artist. The series was called Now:Here:This, and it involved art made in a moment (or a few moments) by people all over the world at roughly the same space in time. I started making short, static videos. I gave myself some rules…they had to last about a minute. I couldn’t change the frame. The sound would be whatever naturally occurred for that minute. I focused on leaves, or water, or shadows, even dirty dishes in the sink. The sound generally involved my children yelling for me and trying to get my attention, which was an idea that I liked a lot. It captured my life at the time (and to this day.) Children always want your attention most when you’re doing something else. When you’re on the phone, or making short videos, or writing about trumpet mushrooms on some stupid blog! I became very taken with making the videos – there was nothing brilliant about them, but I liked the way that shooting them made me think about how long a minute lasts, how hard it is to be quiet and still, how my life sounded, how pretty small things could be. And then Ozu went and stole the idea from me! I’d like to stop and look at my house, for moments at a time, from down a corridor, when nothing is happening. Of course it wouldn’t be quiet and clean and cool, like in Ozu’s films. It would be a warm messy muddle.

Segue! This meal is a sort of warm/cool combination. A warm salad, or a cool stir fry. I went to the Stockton market. I bought some trumpet mushrooms. They were ridiculously expensive. I felt a little foolish, clutching my brown paper bag of precious mushrooms. The meal turned out very tasty, though, so it’s okay, I think. I sauteed some chard with garlic, red pepper, castelvetrano olives and fresh basil. I mixed in some brie, smoked gouda, and goat cheese. (Three cheeses! So extravagant! They were very nice together, and gave the meal a warm, creamy, tangy smokiness that was lovely. But you could use what you have.) The mushrooms I sliced very thinly, and then sauteed in olive oil with fresh sage leaves. The mushrooms and sage leaves became nice and crispy. I said the mushrooms tasted like bacon, and David said…”better than bacon – like steak and bacon. Steakon!” The pine nuts added a lovely crunch. They always have a little bit of a smoky, bacony taste to me, too!! You could easily make this with portobellos, spinach, and whatever cheese you happen to have.
