There are two quotes about photographer Eugene Atget that I particularly love. The first: After his death, the doctor asked his neighbors what he had died of. They replied, “He was an eccentric.” The second: “Atget never realized that he was Atget.” He never understood (or didn’t care to understand) the weighty place he occupied in the history of photography, or the influence he had on other photographers. He didn’t think of himself as an artist. He didn’t care for artistic movements and labels. He saw his job as utilitarian. He documented the world around him, and created photos of objects that painters could use as a resource. He lived from 1857 to 1927, and he documented the streets and homes of Paris. He photographed shops and alleys, he photographed staircases and parks and monuments and trees. His subjects were the ordinary, everyday haunts of Parisians: wig stores and litter-cluttered alleys, dingy rooms and the spaces in back of restaurants. His photographs are hauntingly beautiful. They’re beautifully focused and composed; beautifully light and dark. Because his purpose was to photograph a thing, or a place, the movements of the people in the space didn’t concern him. As a result people and animals become a ghostly blur – a transitory spirit biding time in the solid iron and stone buildings. I find Atget’s photos wonderfully cinematic and inspiring, and I could pore over them for hours, looking for the stories behind the facades.

Similarly, you could glance at this eggplant jalousie and look deep into its slanted “windows” to find the lovely nutty-roasted eggplant. (Segue!) This version of eggplant is a slight variation on my eggplant anyone can love. I chopped it thinner and smaller, and rather than dip each piece in egg, I stirred the egg right in. And then I added a coating of chopped nuts. I used pecans, walnuts, hazelnuts and almonds. And then I roasted it in olive oil till lovely and crispy. The first night we ate this with grilled vegetables and a sauce made of capers and pine nuts. (Still perfecting that one, I’ll tell you about it later!) The next night, I made a rough puff pastry, and I stuffed it with these eggplants and with a smoked paprika, ricotta, fresh basil custard. It was delicious! Nutty, crispy, creamy, yum.

Eggplant & olive tart

I had a muddled quote in my head last week. I couldn’t remember the whole thing, and google wasn’t helping. Turns out it was Roland Barthes, from his essay “Upon leaving a movie theater.” The quote goes thusly…“The film spectator might adopt the silk worm’s motto: inclusum labor illustrat: because I am shut in I work, and shine with all the intensity of my desire.”

I’ve been thinking about it a lot, before and after I finally discovered the precise words. At first I thought it was a glow worm, glowing with the intensity of his desire. (I’d asked for help with the quote, and a friend said it reminded him of Churchill’s quote, “We are all worms, but I do believe that I am a glow worm,” which, obviously, I love on every level. I like things that glow. I believe I coined the term “glowy.” Glowy is a Clairey word.) I love film because it glows. Because it’s light through a lens that makes the film and exhibits the film – flickering glowing lights on screen. Of course, this isn’t really true anymore. Obviously video involves light, but it doesn’t glow the way film does. And Barthes’ quote is from a place and time inhabited by people who thought of film as an art, that they could shape by endless discussions, which sometimes resulted in beautiful films being made, and sometimes resulted in more discussions. I’m sure the conversations glowed, too, with the intensity of their words.

Nowadays the film spectator isn’t always cocooned in a darkened theater. They are, as likely as not, watching on a television in their home, with familial chaos all around them. I thought about myself, when I was younger, talking about films, making films. Not shut in: filmmaking is collaborative, it requires confidence and lots of coordination, but you do spark off of the people you work with – you do create light that way. I thought about my life in the last ten years, as a mother. I believe I have slowly shut myself in. I have slowly pulled soft silken threads around myself and my family. I believe this would have happened even had I worked full time outside the house. It’s not that I don’t have friends and interests outside of my family, it’s that I have this space, this home, from which I look out on the world.

And within my space nothing glows as much as my children, with their creative lightening, their immediate needs, their unshaded love. I’ve been thinking that the “work” I do, shut in pleasantly here, especially in the last year, has been cooking. All of the creativity, the fiendish plotting, the anticipation – it’s all become so important to me…it’s such a pleasure to do this work. And writing has become important to me again, too, whilst shut in with my beautiful sassy brats. The beauty of it is that you can do it anywhere, at any time, you can put words together in your head no matter what else you’re doing, and if you’re lucky they’ll glow for you. In the end, this work doesn’t confine us, it gives us the sustenance and the shine we need to venture out into the world.

I love a meal that takes a little bit of attention at various points throughout the day. You’ll start something in the morning. You’ll forget about it for a few hours and go ineffectively do some housework, or go on adventures in the secret passage that leads to the other secret passage on the other other side of the canal. You’ll go home and slice this and mix that, and then leave it while you take the boys to a creek or the river. And then just before dinner you’ll have a big glass of wine and start putting everything together. This is just such a meal! You can start the dough, and leave it for hours. You can slice and salt the eggplant, and leave that for a while. Come back, punch down some dough, make a marinade for the eggplant, go about your business. Plus it tasted really good! Crispy eggplant, fresh tomatoes, a soft but crispy cornmeal crust, a subtly flavored roasted garlic custard, smoky mozzarella, some briny olives, and some fresh basil. What could be better than all that? I actually roasted a whole head of garlic, in a little pottery garlic roaster, and used a few of those cloves. You can also toast a couple cloves in a toaster oven, or roast them in the oven at 425 for about 15 minutes, to take the edge off. It won’t be quite as soft and delicious, but good nonetheless.

Spicy smoky zucchini & tomato tart

Smoky zucchini and tomato tart

Here at The Ordinary, we have acquired our first real food processor. It didn’t come with instructions, but we are performing exhaustive experiments in our extensive underground kitchen-laboratories to determine its function and capabilities. We have puréed paper, grated legos, and julienned our entire DVD collection. We would like to inform you that from this point onward, every thing we cook will be diced and sliced to within an inch of its life. You have been warned!! I’m joking, of course, but I’m very excited to finally have a food processor. My friend Jenny gave me her old cuisinart. I brought it into the house and Malcolm said, “Oooooh, what’s that?” And then he and I gathered around our new toy, and tried to figure out how to use it. Did you know that every little piece has to be locked into place, in a certain order, or it won’t work? I didn’t! I kept loading it up, pressing the button, expecting a huge loud noise, and then….nothing! We finally got it all figured out, though. And before I knew it Malcolm had grated two large zucchinis. And then I had to try the knife-type blade, so we chopped up some basil, cilantro, tomatoes, almonds and hazelnuts. We made a chunky sort of sauce. Very smoky and flavorful, because I’d put every smoky thing I could find in … black cardamom, nigella seeds, smoked paprika. We ate it with saltine crackers, and it was very tasty! The next day, I decided to further test the abilities of my processor, and I pureed this chunky sauce till quite smooth, then added some eggs and milk, put it all in a biscuit-like crust with smoked paprika in it, added some fresh cherry tomatoes and fresh mozzarella, and made a tart! What with the nuts and all, it’s almost like a savory frangipane. We ate it with potatoes roasted with tomatoes and shallots, which were sort of saucy, and everything went well together. You could make this with a blender and a regular grater, if you don’t happen to have a food processor.

Some days feel like time-outs. If life is like a giant game of tag, and “it” is pursuing you relentlessly, and you’re giggling, breathless, with that small edge of real fear that tag-playing elicits, and you’re miles from base: sometimes you have to call time-out. The last couple of days have felt like that. Isaac and I have been on a team, and we’re taking a little time out together. He’s under the weather. Monday we spent a couple of useless hours at the doctors’ office, and I got antsy, and thought, “Dammit, I’ve got important things I need to be doing!” Yesterday he had a fever, and the whole house was hot as hell except for his air-conditioned room. He didn’t want to be alone, so I lay on his bed next to him, and thought, “Oh dear, I’ve got important things I need to be doing!” And then I realized that I really don’t. It’s an interesting fact about a time-out, that sometimes from this point of view you see the game more clearly – everybody else running around frantically, in a red-faced tizzy. As I lay there besides Isaac, with his hot little head touching mine, I realized that I don’t really have anything important to do. The realization was a little sobering, a little liberating. I was very tired, because I don’t sleep much when there’s a fever in the house, and for the moment it felt good to lie next to Isaac, and listen to him explain Isaac-y things to me in his sweet serious way. Their room is bright, with sea-green trim and pale curtains that hold the light. It felt a little like floating in cool water for a short while. And, of course, this little glowing ripple of a moment is the most important thing I need to be doing.

I’m always a little crazy when the boys aren’t feeling well. I don’t sleep much, I get that weird tired-nervous energy. It makes me want to bake! In the winter time I’ll bake cookies with the boys. It was, frankly, a little hot for baking yesterday, even for me! But I’d had this thought in my head for a while of a tart that would be fun to make and fun to eat. I’m very excited about this one! I think it turned out really well. Really perfect combination of tastes and textures. I’ll tell you all about it. It’s a peppery hazelnut crust, and it’s a very tall crispy crust. Inside of that, we have a thin layer of goat cheese custard with thyme and caramelized onions. Simple. The whole thing is served slightly warm and inside is a mess of cool, lightly dressed baby arugula with pine nuts and fresh tomatoes! It’s like a salad tart! Perfect for a hot day, cause you can make the whole thing in advance. I love goat cheese with arugula. I love hazelnuts with arugula. (If you don’t have pine nuts, you can use toasted chopped hazelnuts instead.) This is a nice thing to eat when you’re taking a time out. Be it a summer-day time out, or a stop-and-enjoy-your-nice-dinner-and-glass-of-wine time out.

“People talk of natural sympathies,” said Mr. Rochester. And we all know that he was just trying to seduce Jane Eyre, but he wasn’t wrong – people do talk of natural sympathies. Not just between people, but between colors, and musical notes as well. Certain things just look or sound pleasing when they’re combined. The boys have a book on the history of perspective in art, and I find it so fascinating! Artists through the ages have tried so hard to understand the world through mathematical rules – they understood it in order to draw it, and they understood it by drawing it. (Which is what little Isaac does, it seems – when something interests him he has to draw it, and he’s always pleased with what he draws) Apparently Paolo Uccello would stay awake at night after his wife had gone to bed, searching for vanishing points, and he’d say, “Oh, what a a sweet thing this perspective is!” And Piero della Fransesca believed in a perfect geometry underlying God’s creation. He saw everything as defined by measurements and numbers, which had mystical properties. Everything was carefully planned, in his art and in the world around him to be pleasantly harmonious. David, who is a painter, will point out how certain colors “hum” when they’re next to each other. Some even create a beat when placed in proximity – almost a flashing in your vision. My piano teacher, who was also a painter, used to say that each painting should have one “key note” color, which stood out from all the other, and didn’t harmonize with the rest of the picture. I think it’s interesting that the visual world is spoken of in musical terms, what with all the humming and the beats! I asked my mom, who is a professor of music history, if people believed certain chords together had magical powers. Oh yes! She said. People used to believe that you are what you listen to, and that you could be driven to certain actions – saintly or diabolical – according to what you heard. Octaves and fifths were pure and safe, but the tritone was the devil in music, and could cause terrible unrest. She said that if you took perfect fifths, and sang them perfectly in tune, by the time you got four octaves up, you’d be a half-step flat. People used to develop all sorts of tunings to solve the problem (well-tempered tuning) and now we use equal temperament tuning, in which we adjust by making everything equally out of tune. “In order to end up on pitch you have to compromise everything else,” Says my mother, “Just like in life.”

Well, I believe that there are certain flavors that go together perfectly, as well. When you taste them they just make sense, and they hum in your mouth. Frequently they grow together and ripen together, which almost makes you agree with Piero della Francesca’s assessment that there’s some divine pattern accounting for all of the harmonies in the world. Tomatoes and basil, for example. Perfect. And I like to think about my piano teacher’s idea of introducing one element of flavor that’s surprising and unexpected, and makes all of the other happily harmonizing flavors more exciting. Some flavors hum along together, some contrast pleasantly, to create a beat. Personally, I love chard and french lentils together. And I love chard and some sweet and tangy fruit. And I love them all together in a crispy crust. I really liked these empanadas! It’s one of my favorite meals I’ve made in a while. I combined chard, which had been sauteed with a bit of garlic and hot red pepper, with lentils, which had been cooked with nigella seeds and sage. I added some caramelized onions, for sweetness. And I added a spoonful of quince jam. I used queso blanco & mozzarella to make everything nice and melty, and bring it all together. I’d read that in argentina they make empanadas with quince paste and salty white cheese, and I guess this is my version of that. We ate these with my version of patatas bravas, which I’ll tell you about in a little while, and, I’m not saying it was a masterpiece, or anything, but it was very pleasing meal to have in out little green backyard on a cool summer evening.

Blueberry pie & honey ice cream with smoked sea salt

Honey ice cream

Honey is lovely! Sweet, amber-colored, the product of all the busyness of the buzzing golden bees – it’s like the distillation of summer light. The promised land will be flowing with milk and honey; it’s a symbol of the new year and of hope; it’s one of the Hindu elixirs of immortality. It soothes a sore throat better than any medicine I know. It’s so strange to think about where it comes from, and to imagine people discovering that it was edible, and tasty, and salubrious. I find it humbling to think about the mysterious process of honey-making and pollination, the complicated, social, important life of bees, so vulnerable to our clumsily destructive way of life. There’s been a decline in honeybee populations lately. To quote wikipedia, “In early 2007, abnormally high die-offs (30-70% of hives) of European honey bee colonies occurred in North America; such a decline seems unprecedented in recent history. This has been dubbed “Colony collapse disorder” (CCD); it is unclear whether this is simply an accelerated phase of the general decline due to stochastically more adverse conditions in 2006, or a novel phenomenon. Research has so far failed to determine what causes it…” I remember reading about it at the time! I had recently finished War and Peace. Leo Tolstoy was a beekeeper (that’s totally going to be the name of my next album!), and there’s a succinct, remarkable chapter towards the end of the book in which Tolstoy compares war-torn Moscow to a decaying bee colony without a queen.

“…he sees the skillful complex structures of the combs, but no longer in their former state of purity. All is neglected and foul. Black robber bees are swiftly and stealthily prowling about the combs, and the short home bees, shriveled and listless as if they were old, creep slowly about without trying to hinder the robbers, having lost all motive and all sense of life…In place of the former close dark circles formed by thousands of bees sitting back to back and guarding the high mystery of generation, he sees hundreds of dull, listless, and sleepy shells of bees.”

It all seemed mysteriously connected, at the time, to our own country at war. We’d been in this hideously complicated conflict for years. It seemed as if it would go on forever – for as long as people would profit from it. It felt as though we were numb – we’d grown capable of tuning out the news until the news stopped being reported. A strange connection that only the honeybees might understand!

Well, I’m rambling on about Leo Tolstoy’s bees. I blame the heat, it’s really hot here! Let’s return to honey as a hopeful symbol and an endearment! And as the main ingredient in a recipe for honey refrigerator ice cream I found in my mennonite cook book. I knew I had to try it! I used one cup of vanilla-maple pastry cream and one cup of heavy cream, instead of 2 cups of cream, as the recipe suggested. And I decided to add some smoked sea salt that I’d bought at the lovely Savory Spice Shop on my birthday. I like the saltiness with the sweetness of the honey. If you can’t find smoked salt, you can use regular salt. The smoky flavor is very odd and distinctive. I love it, but it might not be for everybody!! On the way to Cape May, we drove through the blueberry capitol of the world! Rows and rows of lovely short shrubby bushes laden with beautiful blue berries. David said he had a craving for blueberry pie, so I made one. I made it as simple and traditional as I could muster. I used a sweetish shortbread-type of crust, because I like that with fruit pies, but you could use a more traditional and easier to work with butter crust. I made a lattice top! Fun!

Well, I was a little cranky yesterday! I had a small tantrum because we couldn’t find some place we used to go bird watching. I yelled at the boys everywhere we went. I yelled at them for making me yell at them. I yelled at them as we bought them giant cookies. And they weren’t being bad! They were happy, and noisy, and getting along with each other. But Isaac has this squeal – it’s very high-pitched, and it goes right through you. He resorts to it whether he’s very happy, indignant, or actually hurt. It signals panic either way. And Malcolm was being sweet and good, but why can’t he just walk? Why must he climb walls, jump off benches, press Isaac’s shriek & giggle buttons? Why! By evening-time I had to sit in the back yard and watch squirrels to try to rid myself of my cranky-induced headache. But I wouldn’t tell anybody about that! I’d talk about the good things – the Savory Spice shop we went to, which was completely wonderful! How sweet it was to see the boys excited about smelling all the spices! The beautiful place we found for a walk! The tart that I made for dinner, which I had literally dreamed of, which was a little odd, and which I might not have made if it wasn’t my birthday! Everybody being together on a beautiful day! How I got a beautiful new golden-amber bakelite watch and some perfectly claire-y pens and a blank notebook, which is the most inspiring thing ever! I started watching a Masterpiece Theater version of The Portrait of Dorian Gray the other day, while I was exercising. (I jump around the living room holding two cans of beans while I catch up with The Daily Show on the computer. Isaac thinks this is hilarious! “You’re holding two cans of beans!!”) I love late Victorian novels – they’re so well-crafted and beautifully novelly. It was pretty well-done. It had Prince Caspian in it, and Mr. Darcy! And some guy named Ben who was familiar. It was a little dark and gloomy for early-morning-exercise-viewing. It had a lot of shocking Victorian nudity. (Masterpiece Theater wasn’t like that when I was a lass! When I was a lass, characters from televised versions of literary classics had the decency to keep their oddly-eighties-looking costumes on, thank you very much!!) When I thought about how cranky I was yesterday, but how I wouldn’t write about that part of the day, I had an idea for a modern version of Dorian Gray. What if there was somebody who had one of those mommy-blogs, or an advice column about parenting. What if they talked about their own lives in glowing, unrealistic terms. And then…all of the bad stuff they don’t write about manifests itself doubly in their real lives, until they all descend into a spiralling vortex of depravity and despair!! Bom bom bommmmmmmmmm.

So! This tart! I was quite excited about it. I had thought of having a tart with a base of chard and goat cheese and fresh basil, all mixed together till smooth and bright green. This would be poured into a crust which contained some zesty lemon zest and white pepper. And it would all be topped with chickpeas and olives, which would become, as it were, roasted, as they cooked. And poured over the whole thing would be a provocative glaze of quince jelly, lemon & lime zest, and lemon and lime juice, for a sweet/tart surprise. It was surprising, and I thought it was quite good – very summery. I mixed some sumac and smoked paprika in with the chickpeas, because I had just bought them at the savory spice store, and I was little-kid-excited about it. Isaac said he tasted three layers of flavor, which I thought was very bright and perceptive for a six-year-old.

I also roasted some potatoes, and we had them with lots of pepper and my new alderwood-smoked sea salt. (SMOKED SEA SALT!!) it was delicious!!

I was going on and on (and on) the other day about Konstantin Levin from Anna Karenina, and it reminded me of an unanswered question floating about in my head for a few years. In Franny and Zooey, by JD Salinger, there’s a scene in which Zooey wanders into his elder brothers’ bedroom and sees a white beaver board that they (the brothers) have filled with hand-written quotes from various sources. (At least that’s how I remember it – it’s been a while since I read it!) One of the quotes was from Anna Karenina, and since I’ve read Anna Karenina, I’ve meant to go back and see which it was. Well! We’re going through old boxes of books in our attic, and I pulled out a dusty copy of Franny and Zooey. Then I forgot about going through boxes of old stuff that was making me feel alittle queasy about time passing and trying to remember who this crazy person was who had saved all the old stuff, and sat down to read about Zooey going through old stuff that brought back his own strange memories. (I like Salinger a lot. I feel mildly embarrassed by this, and I’m not sure why. I think some people might think he’s sophomoric, but I love his evocative small details, and, of course, I love his questing quality. And that’s all I’ll say about that!)

I like the idea of a collection of quotes all in the same place. Quotes that have nothing to do with each other, but that might give each other new meanings from being next to each other. So I’m going to put a few (completely random) quotes here, just for kicks, baby! Ready, begin…

To get straight to the worst, what I’m about to offer isn’t really a short story at all but a sort of prose home movie, and those who have seen the footage have strongly advised me against nurturing any elaborate distribution plans for it.

Now…this galette. It has a yeasted crust with some basil to flavor it. And inside it has grated zucchini, toasted pumpkinseeds and red beans. You can start the crust early in the day, and the filling is actually very easy to put together. I flavored this with fresh basil and fresh marjoram, which are lovely sweetish summery flavors. And I decided to add a little ginger and a touch of cinnamon, which are sweetish wintery flavors, in my mind. I liked the combination a lot! If only because it was different from the spice/herb combinations I seem to return to again and again. And the galette was actually quite pretty – white and red and green.

Chard and castelvetrano olive tart

I studied English literature and cinema studies in college. This means that I’ve been waiting tables for well over 20 years. It’s a strangely addictive profession! You might think you can find your way out, and get a “real” job, but the seductive world of restaurant service keeps drawing you back in. Recently there’s been a picture circulating the internets. A banker left a “tip” for his waiter; he left 1 %, moneywise, and then just the words “get a real job.” I ask you, which is a real job – serving people food that’s necessary for life, or playing around with arbitrary numbers that have some confounding and imaginary relation to money? (No offense to the bankers out there! All jobs are real jobs if you do them well – even banking!) Ahem – waitressing. It’s social, it’s active, the hours are flexible, and you can make a ton of cash on a good day. And it’s really hard. It’s not a job that just anybody can do. I’ve seen plenty of people who didn’t have the mental acuity, the physical stamina, the social graces, or the ability to take tons of shit from people for a ridiculously low wage. You meet a lot of interesting people, waiting tables. Everybody has something else they’re working towards. They might be artists, actors, musicians, students, moms … everybody has a story (and usually lots of stories) to tell. And I’m going to use my copious server experience to write a series of soon-to-be-bestselling self-help books entitled, What I Learned When I Served You Your Lunch. Lessons from the world of waitressing. For instance, we have a phrase, in the restaurant business. It describes periods of extreme unexpected busyness, when you’re short-staffed and overwhelmed, and you feel like you’ll never make it through the shift with your sanity in tact. You feel weeded. You’re in the weeds. This almost happened to me this weekend. Except that I don’t get weeded, because I don’t let myself. I simply say, “this will all be over before you know it; getting flustered will only make things worse; your customers are not half as aware of the situation as you are.” Right? Isn’t that a good way to think about other things that fluster you as you move through the world?

Sometimes I think about using my many years of restaurant experience to open our own place. It would be called The Ordinary, of course. It would be tiny, it would have two or three tables. It would have a set menu – one or two different things each day, and vague prices. And I’d serve things like this – this lovely savory tart, with chard from the CSA and beautiful, tasty castelvetrano olives. This tart is flavored with tarragon and basil – two very fresh and summery flavors. I chose the most anise-y basil that we’re growing, because it went well with the tarragon. I used more cheese in this tart than I usually do, which made it a bit like pizza (a selling point with Isaac, who eventually tried it and ate the whole thing and asked for more!) but you could easily use less. The crust was crispy and crunchy with hazelnuts, and went very well with the savory greenness of the tart.

Strawberry tart with white chocolate pastry cream & hazelnut cocoa crust

Strawberry white chocolate tart

According to family legend, my mother ate a quart of strawberries each day when she was pregnant with me. One of the nice things about a June birthday! To this day I love strawberries, and so do my boys. I could bring home two quarts of strawberries, and they’d eat them before I even had a chance to wash them, if I let them. So I don’t get to make fancy strawberry desserts very often. There’s something so plump and rosy and youthful about strawberries, that it’s no wonder Ingmar Bergman employed them as his time-travelling device in Wild Strawberries. I’m fascinated by the idea of food as a trigger of memory, and I love films that explore memory and dreams, so this scene is one of my favorites. I love his quiet, gentle voice. He’s telling his own story, so he can slow time, and move through it with dream-like ease. And with the odd logic of dreams, he can’t speak to the people that his memory conjures, though he can witness scenes he missed in real life. I love that he’s dressed in dark clothes, and stands in a quiet, darkened hall, but the glow of whitewashed memory washes over him from the bright, busy room he’s looking into. Beautiful! Perhaps this tart is one they might have made for somebody’s name day, on a lovely summer day by the sea. It’s quite simple…a cookie-like crust with dark cocoa and hazelnuts (nutella combination!) is filled with white chocolate pastry cream, and fresh, unsweetened strawberries. It’s like a white-chocolate covered strawberry in tart form. It was fun to watch the boys eat this – the pastry cream is soft and slippery, the crust is a little crunchy, and the strawberries plump and ripe. An alternative preparation would be to fold some unsweetened whipped cream into the pastry cream before you spread it into the tart shell, which would make it like the pretty pavlova cakes I used do dream about as a child!
