Grilled veg and pigeon peas

Here at The Ordinary’s anti-boredom institute, we believe that you have to be taught to be bored. Babies are never bored. Give them a shaft of light and their little fingers and they’re happy for ages. Little children don’t get bored. It’s when you’re older, and somebody shows you that it’s cool to be bored, that it all comes crashing down, and you lose the ability to entertain yourself. Unfortunately it feels as if this is happening at a younger and younger age. One week into summer vacation, Malcolm announced that he was bored, and needed to watch a(nother) video. I lost it a little bit. I yelled, “you are not that boy – you don’t have so little going on in your busy brain that you need to watch television to keep from being bored!” He sighed, and may have rolled his eyes, my little nearly-ten-year-old-teenager. I’m a big believer in unstructured time, for little ones. Isaac likes to lie on his back in bed, one leg thrown over the other knee, singing and thinking. I always wonder what’s going on in his bright little head. The two of them together can spend hours on some scheme or another. Sometimes it’s better not to know what they’re up to! When I was growing up my mom used to say, “people who are bored are boring.” It’s a lesson that I took to heart. I truly believe that you should have enough inner resources to be stuck in traffic and not be bored – your thoughts should be able to keep you busy and happy. It’s mother-flippin hard sometimes, I know! Inertia, ennui, fatigue, 90+ degree weather – they weigh you down! But it’s what I wish for my bright boys. Now to keep them away from the damn DVD player! Of course it might help if I stopped writing about how I don’t want them to be bored, stepped away from the damn computer, and engaged! We live in such a noisy world! My friend Laura shared this article from the NYT that I found very validating!

OMG, you know what else is totally boring? Eating the same grilled vegetables two days in a row. Sheesh. Unless…you sautée them with pigeon peas, add a squeeze of lime, a giant handful of fresh basil, and a scattering of pine nuts. (Now that I have pine nuts, pretty much every thing I make will involve pine nuts. Until they’re gone. You’ve been warned!) This turned out really tasty. It was an after work – very tired – it’s too hot to cook meal, but it was actually quite special. It was David’s suggestion to use pigeon peas, and it was an excellent one. They have an earthy quality that went well with everything else. You could use any grilled vegetables you have leftover, but I have to say beets, potatoes and mushrooms were lovely. I stir-fried some zucchini, and with the beet juice and nigella seeds, it ended up looking uncannily like water-melon slices! You could, of course grill the zucchini. You could also roast all the veg, or even sautee it all, if that was easier for you, or you don’t have a grill, or it happens not to be summer as your read this. And you could substitute chickpeas for pigeon peas, if that’s what you have on hand. We ate this with basmati rice and some good bread.

On the last day of school, Isaac said, “Mom, for summer vacation I want to go to a big field somewhere and play tag.” And that was his whole plan! I love that idea. I love the simplicity of it. I can just picture our family, all summer long, in a big glowing green field, playing tag. I feel that I have less and less ambition to make big plans and take big trips. I’ve always had something of Moley about me. Or maybe Ratty – content to while away the hours in my riverside home. I do love to travel – just the other day I was thinking about how nice it is to walk around a strange city early in the morning. I do want to take the boys to other countries, and show them that their home is only the center of their universe. But for now, I’m happy spending long, slow summer days with the boys, not doing much of anything at all. Today we went creeking. They threw rocks in the creek, and found a spider the size of Isaac’s hand (biggest spider I have ever seen in real non-zoo life!) They built a pyramid of smooth creek rocks. And on the way back through the woods we found two little ponds. Malcolm waded through them, and spotted a frog. The plump bronzy-green frog swayed in the small waves made by Malcolm’s steps, his little froggy hand reaching toward the slick bank to ground himself. Malcolm made a dive for him, and he swam under a large rock. We decided to wait, as quietly as possible, for the murky water to clear, and the frog to reemerge. I’ve been trying to slow myself down, lately. I’m always impatiently on to the next thing, I can’t sit still. This is why I can’t do yoga, and I can’t enjoy sitting at the beach for hours and hours. I feel like I’m anxious to get things over with and carry on, even if I’m doing something I’m enjoying. I don’t know why. I’m always hurrying the boys from place to place like a madwoman, even though we almost never have anywhere we need to be, in the summer. So we stood very still, and listened to the wind in the trees far over our heads, and felt the warm dapply sun. You can’t hurry a frog!

In that spirit, I made beans from scratch, in the slow cooker. As I’ve said in the past, I almost always use canned beans. (I’m actually very loyal to goya as a brand, and I think their beans are fresh and tasty. My first product endorsment!) But it’s fun to make beans from scratch, sometimes. It’s nice to use the slow cooker, on a hot day, because it doesn’t warm up the kitchen too much. And I like collards in a slow-cooked scenario, because their flavor develops nicely and they don’t turn to mush. I’ve also been on a food-quest for black cardamom, lately, and I finally got a big bag, and I was extremely eager to try it out. They’re wonderful! Big wrinkly black pods, with the most amazing smoky-sweet flavor. I love them! Their taste is milder than their smell. If you can’t find them, you can use green cardamom, or cardamom powder, and add a touch of smoked paprika, if you have it. This would probably good with rice, but I didn’t think of that at the time!

I was going on and on (and on) the other day about Konstantin Levin from Anna Karenina, and it reminded me of an unanswered question floating about in my head for a few years. In Franny and Zooey, by JD Salinger, there’s a scene in which Zooey wanders into his elder brothers’ bedroom and sees a white beaver board that they (the brothers) have filled with hand-written quotes from various sources. (At least that’s how I remember it – it’s been a while since I read it!) One of the quotes was from Anna Karenina, and since I’ve read Anna Karenina, I’ve meant to go back and see which it was. Well! We’re going through old boxes of books in our attic, and I pulled out a dusty copy of Franny and Zooey. Then I forgot about going through boxes of old stuff that was making me feel alittle queasy about time passing and trying to remember who this crazy person was who had saved all the old stuff, and sat down to read about Zooey going through old stuff that brought back his own strange memories. (I like Salinger a lot. I feel mildly embarrassed by this, and I’m not sure why. I think some people might think he’s sophomoric, but I love his evocative small details, and, of course, I love his questing quality. And that’s all I’ll say about that!)

I like the idea of a collection of quotes all in the same place. Quotes that have nothing to do with each other, but that might give each other new meanings from being next to each other. So I’m going to put a few (completely random) quotes here, just for kicks, baby! Ready, begin…

Now…this galette. It has a yeasted crust with some basil to flavor it. And inside it has grated zucchini, toasted pumpkinseeds and red beans. You can start the crust early in the day, and the filling is actually very easy to put together. I flavored this with fresh basil and fresh marjoram, which are lovely sweetish summery flavors. And I decided to add a little ginger and a touch of cinnamon, which are sweetish wintery flavors, in my mind. I liked the combination a lot! If only because it was different from the spice/herb combinations I seem to return to again and again. And the galette was actually quite pretty – white and red and green.

Isaac loves to draw. When he sees something that interests him – in a book, or a movie, or museum exhibit – he needs to get to a pencil and paper as soon as possible to draw his own version of it. He can draw happily for long periods of time. Completely rapt, tongue out like Charlie Brown, bent over the paper, making sound effects to accompany his drawing. His style is full of movement and energy. He’s a very confident artist. When he sets out to draw something, he doesn’t worry that it won’t come out the way he pictures it in his head. He doesn’t cripple himself with unrealistic expectations. He wants to draw something, he draws it, and he’s always happy with it. It’s a lesson for us all! And it can be found in chapter 4 of my upcoming series of soon-to-be-bestelling self-help books called, Life Lessons from Isaac: Learning to Live Like a 6-year-old. Chapter 3 suggests that if you don’t get what you want, you like on the floor, complaining in an indignant, incomprehensible, ascending stream of words, until the pitch gets so high that everyone around you fears that their head will explode and gives you whatever you ask for to make you stop. Try it at work!! Malcolm loves to draw, too, but he’s more self-doubting. He gets frustrated and impatient if it doesn’t look like he imagines it, or if it takes too long. He’s got a few drawings he’s happy with, and they’ve become his trademark drawings. His graffiti tags. One of my favorites is this owl.

The other day, Isaac went to the fleamarket with his aunts and his grandmother. He found five thimbles.

I love this drawing! It’s so expressive. And thimbleman’s thimbles have magical powers, like lazers, water, super-punch, and I can’t remember the others, even though Isaac patiently explained it all to me twice.

And that night for dinner, Isaac ate quinoa kofta!! The kid doesn’t like much, but he likes Indian food. And olives. And other very strong-tasting items. Won’t touch a banana, but he’ll stuff himself silly on punjabi mix. He likes creamy curried sauces, which the boys call “yellow stuff.” I made this sauce out of cashews, tomatoes, and red leaf lettuce. The lettuce gives it a nice little sweet-bitter bite. The sauce is very smooth and creamy, but there’s no cream in it. And the quinoa kofta, made from leftover black quinoa, are lovely and crunchy – from being roasted in olive oil, and from the naturally crunchy crunch of black quinoa!! I served them in their sauce over basmati rice.

Grillable vegan burgers!! And grilled flatbread

Here at The Ordinary, we have an extensive labyrinth of underground bunker-kitchens. In this subterranean kingdom we work on our most specialized and top secret foods. (We’re currently working on a candy that glows with a blinking light and flits around your backyard on soft summer evenings – you have to catch it before you can eat it! Don’t tell! Very hush hush] Well, for years, we’ve exhausted innumerable resources and personnel trying to develop a vegan burger that would be grillable. It needed to stay together, and not fall apart in a crumbly mess. It needed to actually become browned and crispy – not just leave all the brown and crispy bits clinging to the grill. It needed to taste good, and be easy an economical to make. Mwah ha ha ha!!! WE HAVE DONE IT! [lightening strike!]

Actually, this was our first attempt, and it worked, and we had so much fun making it, and were so thrilled that it worked that it’s just silly. The burger is made of roasted beets, shallots, and garlic, basmati rice, bread crumbs, roman beans, and seasoning. That’s it! Simple, cheap, and really tasty! We seasoned ours with sage, rosemary, smoked paprika, and just a smidge of chipotle and marmite, but you could easily use any seasoning you like. You could make spicy burgers with more chipotle, you could make curried burgers. You could also use a different bean, pinto would be nice! Try these even if you think you don’t like beets, because beets that are roasted/toasted, and then mixed with other stuff, and then grilled, would probably appeal to just about anyone, be they a beet lover or a beet hater. If you really really can’t eat beets, I think these would work with roasted mushrooms instead. I’ll try it and let you know!! Can I just say that this particular combination, when being mixed and mushed, looks disconcertingly like ground beef! Very strange.

We ate these with flatbreads, which we also grilled!! They were browned and crispy on the outside, and soft and flavorful inside. We cut them in half, lengthwise, and put a burger and lots of lettuce and tomato inside. Very fun to make, very tasty! We also ate these with a slice of sharp cheddar melted on top. The burgers may be vegan, but we’re not! I’m sure it would be good with vegan cheese, or no cheese at all.

We wanted to use the beet greens as well, because they were so pretty, so we boiled them for a few minutes, and then sautéed them with zucchini, garlic and red pepper flakes. Then we tossed a small handful of chopped roasted cashews, and a small handful of grated coconut (the sweet kind!) and a few fresh basil leaves. Delicious!

David and I had a lovely friend named Madeleine. She was Belgian, and her husband had been Greek. We used to spend afternoons in her teeming garden, drinking Belgian beer and eating Greek rusks and delicious cheese. She had wonderful stories to tell. She’d met Hergé! Hergé!! Madeleine’s daughter, Sandy, lives in Greece, so I don’t see her very often, but since I’ve started this blog, she’s been sending me Greek recipes. They’re wonderful – eggplant, spinach, savory pastries, lemony potatoes! I can’t wait to try them. Recently, she spent some time in Paris, and she sent me a description of her meal, which she called “two non-recipes from Paris.” I love the idea of making a meal based on a description of a special lunch somebody had somewhere. Wouldn’t it be fun to find old letters (even very old letters) from all sorts of people all over the world, and make a cookbook based on meals that they describe? Yes! It would! Anyway, the meal Sandy wrote about sounded like exactly my kind of thing. She’d eaten a dish with meat, figs, potatoes, and little onions, probably shallots. Doesn’t that sound perfect? Of course, I left the meat out, and I decided to replace it with white beans, and cook it into a nice brothy, stewy type of meal. I’m sure the original was far more elegant, and I’ve peasant-ized it, but it just seemed perfect that way to me, yesterday. I bought three plump, ripe little figs, but if these are hard for you to find, you can replace them with dry or even a few tablespoons of fig preserves. I used red-skinned potatoes, and the whole dish had a lovely rosy hue. We ate this with goat cheese toasts plus extra crusty bread for soaking up the broth.

Broccoli, black beans, and scallions

My little Isaac has mastered the art of bicycle riding. It’s not just that he can ride a two-wheeler, but that he rides his bike exactly as a bike should be ridden. It’s all about the journey, with him. Isaac is not a practical man. He’s dreamy and glowy and delightfully meandering, and that’s how he rides his bike. He’s like a little gnat, flying along in dizzy spirals, darting unexpectedly at passersby, weaving happily from side to side. Sometimes he’ll take off at top speed for about half a block, and then he’ll stop to take off his itchy helmet for a moment, and ask me what my favorite dinosaur is, and if it has little yellow eyes. Then he’ll laugh and say, “You couldn’t know that! Nobody could know that.” Then he’ll get himself going again, and sway happily down the street. He has no sense of urgency about getting to school on time. I feel like such a traitor to the world of childhood when I hurry him along, and lecture him about lateness. I feel like the kind of person who would use the word “tardy,” I feel like I’m working for the man.

Isaac is not a very practical eater, either. He seems to live on fruit and sunshine. He’s a vegetarian who doesn’t like many vegetables. He’s not hungry at mealtimes, but he’ll be ravenous fifteen minutes later. He only likes certain shapes of pasta, and swears that every pasta has its own flavor. He does eat a lot of pasta, so maybe he’s preternaturally discerning. As David said, “fifty words for snow…” When Isaac does eat something of a substantial meal-like nature, with vegetables and protein, it’s like seeing a rare and wonderful bird. I’ll point it out to David with quiet gestures, and he’ll gesture back not to disturb the exotic creature at the watering hole, or he’ll bolt, and leave his meal uneaten. Last night I decided to cook up some scallions and broccoli I’d gotten from the CSA. I was extremely tired after a ridiculously busy shift at work. This was quick, and had a nice mix of salty, hot, and sweet. Isaac approached it slowly. First he picked out the broccoli. Then the beans, one at a time, then he began to eat everything together, by the forkful. Huzzah!!

Quite a few years ago, David and I took a feature film to the Independent Feature Film Market in NYC. Good times! Wandering around the area of New York that surrounds the Angelika, watching strange films during the day. Seeing my film at the Angelika. It’s an ideal week, in a lot of ways. Interesting, exciting, but strangely discouraging as well. I know, it’s a market, it says so right there in the title, but it was depressing that the entire focus of everybody’s frantic energy was selling selling selling. We had very few conversations about the films themselves – about their ideas or aesthetics. It felt like the death of thoughtful American independent film. The quality of the films suffered for it – they were made to be sold. How many knock-off Tarantino films can you sit through (when honestly his films aren’t that original in the first place, are they?) Sorry, I can get very boring and whiny on the subject of American Indies – I’m such a cranky old lady. As I was saying, it was a delightful week, in many ways. Days spent wandering around New York with David are always good days. One evening, physically and emotionally tuckered out, we wandered into a bar that used to be across the street from the Angelika. Match. It was nice inside, warm and glowy. We ordered red wine, hummus and french fries. Rarely has a meal seemed so perfect. Sometimes you don’t know what you’re in the mood for, but when you eat it you feel blissful, and you remember it long afterwards. Since then, it’s become a tradition, when we spend a day in the city, we do a lot of wandering and walking, and we always find a place to have red wine, hummus, and french fries.

Yesterday I got home from work quite tired, and we decided to have a simple meal – so I oven roasted some fries, and made some roasted beet hummus with smoked paprika, cumin, lime and fresh basil, and we had a big salad of farm greens, apples, hazelnuts and goat cheese. Perfect.

Slow cooked canary bean and moong dal

I’ve been feverishly cooking my way through all the veg from the CSA this week. I was a veritable tasmanian devil of vegetable preparation. I paused for a moment, to peer in my vegetable drawer, and…it’s almost gone! Just a head of lettuce left! So I decided to take a day off from primarily-vegetable-meals and cook some beans. I generally use canned beans, to my eternal shame. They’re just so easy, and cheap, and good quality canned beans taste fine to me! But I bought some beautiful pale yellow dried canary beans, and I wanted to cook them up. I’m a big fan of any dish that combines lentils with larger beans. Like urad dal & kidney beans in dal makhani, for instance, so I decided to make a variation on that. I used canary beans and whole moong dal. Both so pretty uncooked, and so drab when cooked! You could use any slow-cooking lentil (whole moong dal and whole urad dal are the two I know of) and any larger, firmer bean that you like (kidney and navy being two contestants). If you used a quicker-cooking lentil, it would just get softer and mushier, but that’s not a bad thing, because it becomes part of the sauce the beans sit it. I decided to flavor the beans with cardamom and smoked paprika. It all started the night before, when I simmered some bok choy with these particular spices and then topped it with peanuts. Baby, it was so nice, I wanted to do it twice! Ahem, my train of thought seems to be derailed at the moment, so I’ll just get on with the recipes, shall I?

Kale & chickpeas with orange and tarragon

Today is our anniversary! David and I have been married sixteen years. It’s gone so fast! These years have become such a long, strong part of my memory, of my happiness, of my life – of who we are. I want to make something special for dinner tonight, and I’ve been thinking about memorable meals we’ve had. The first meal we ever ate together, David made for me – ravioli, red sauce, garlic bread and wine pilfered from his roommates. Still one of the pleasantest meals I’ve ever had! In our courting days we used to go on hikes and take picnics. We always brought bread, peanut butter, dark chocolate and fruit – oranges and apples. What an unlikely, perfect combination of flavors! We brought wine hidden in snapple bottles. The first time we’d ever visited the town where we now live, we went out to dinner on my birthday. I told the waiter, “I’m a vegetarian,” and David said, “So am I.” And that was that – no big announcement, he’d just quietly become a vegetarian, and that’s how we’ve continued our lives together. For a long time we’d share the same plate. We’d make a big mess of pasta or rice and beans and vegetables, and pile it on one big deep plate. And these days I feel grateful every night to live with a man who will happily eat all of the strange food I put on the table! Anybody who likes to cook will know that making food to share with people that you love is what it’s all about. I’m so happy to have somebody to share food with, and listen to music with, to watch films with, to look for birds with, to raise children with, to walk with, to talk with.

I’ll make something more special tonight, but in the meantime, here’s a dish that reminds me of a special meal we had on vacation long ago. We used to go to upstate New York every autumn, and we’d eat at a restaurant called The 1819 House. It was just our kind of place. They served something they called vegetarian paella, and we’ve been having different versions of it ever since. Here’s one version, which I call…vegetarian paella. And this new version has kale, chickpeas, artichoke hearts and olives, in a sweet/salty broth made with white wine, orange juice and tarragon. All of the flavors blend nicely, so you can’t tell where one begins and the other ends. As David said, you don’t really taste the orange, you just taste a sunny, summery flavor.
