Today is our anniversary! David and I have been married sixteen years. It’s gone so fast! These years have become such a long, strong part of my memory, of my happiness, of my life – of who we are. I want to make something special for dinner tonight, and I’ve been thinking about memorable meals we’ve had. The first meal we ever ate together, David made for me – ravioli, red sauce, garlic bread and wine pilfered from his roommates. Still one of the pleasantest meals I’ve ever had! In our courting days we used to go on hikes and take picnics. We always brought bread, peanut butter, dark chocolate and fruit – oranges and apples. What an unlikely, perfect combination of flavors! We brought wine hidden in snapple bottles. The first time we’d ever visited the town where we now live, we went out to dinner on my birthday. I told the waiter, “I’m a vegetarian,” and David said, “So am I.” And that was that – no big announcement, he’d just quietly become a vegetarian, and that’s how we’ve continued our lives together. For a long time we’d share the same plate. We’d make a big mess of pasta or rice and beans and vegetables, and pile it on one big deep plate. And these days I feel grateful every night to live with a man who will happily eat all of the strange food I put on the table! Anybody who likes to cook will know that making food to share with people that you love is what it’s all about. I’m so happy to have somebody to share food with, and listen to music with, to watch films with, to look for birds with, to raise children with, to walk with, to talk with.

I’ll make something more special tonight, but in the meantime, here’s a dish that reminds me of a special meal we had on vacation long ago. We used to go to upstate New York every autumn, and we’d eat at a restaurant called The 1819 House. It was just our kind of place. They served something they called vegetarian paella, and we’ve been having different versions of it ever since. Here’s one version, which I call…vegetarian paella. And this new version has kale, chickpeas, artichoke hearts and olives, in a sweet/salty broth made with white wine, orange juice and tarragon. All of the flavors blend nicely, so you can’t tell where one begins and the other ends. As David said, you don’t really taste the orange, you just taste a sunny, summery flavor.

Chickpeas w/ fine herbes

I have this recurring dream. I’m in my old bedroom in the house where I grew up. I’m surprised to find piles and piles of clothes in the cupboards. Clothes I’d never known about – clothes that I could have and should have worn, but inexplicably never did. They’re stale and horrible and full of moths. In the dream I alway wonder if I could clean them and wear them, but I know that it wouldn’t really work. I’ve always interpreted the dream as being about lost opportunities. Career paths I could have taken but chose not to, films I should have made, novels I should have written. Well, the other night I had a dream that we lived in this strange house. Part of it broke away to reveal rooms upon rooms that we hadn’t known were there. And there were kitchens! Lovely kitchens, painted blue-green and butter yellow. Well-equipped kitchens, with large lovely windows. We were delighted! And I’m going to interpret this dream as opportunities yet-to-come, opportunities right before us that we’re just starting to see. Beautiful and dreamy.

And I should probably warn you that we’re in greens season, at the moment, here at The Ordinary. In our CSA box we received kale, chard, spinach, and turnips with lovely perfect leaves. So there will be greens recipes! Every kind you can imagine! Fasten your seatbelts! I was inspired to make this dish because we’re growing chervil. Chervil is lovely. It’s pretty and delicate and fernlike and has a subtle anise/lemon flavor. As I understand it, chervil is one of the fines herbes, along with tarragon, chives and parsley. So I mixed these with some chickpeas, and some greens, and some artichokes and zucchini, and served it with pearl couscous and giant puffy flatbread, which I’ll tell you about after I get a few chores done. This isn’t the prettiest dish you’ve ever eaten, but what it lacks in visual flash, it more than makes up in wonderful flavor.

Quinoa, spinach & chickpea soup

Quinoa? Aw, man, I was totally into quinoa back when nobody knew about it. Back before it became all popular. I used to buy it at this small store that was, like, all hardcore vegetarian stuff, and, like imports. Quinoa was so cool – it was my favorite, and it totally spoke to me. It was my perfect food, man. And then it started getting bigger, and playing the big stadiums, like shoprite, or, you know, pathmark, and suddenly everybody’s eating quinoa. And it’s in cookies, and, pancakes, and bread, and in mother-flippin statues of Mount Rushmore probably. Totally sold out. It’s so sad when that happens to a grain-like crop grown primarily for its edible seeds. So sad.

That’s right, I ate quinoa in 1993! That’s got to make me one of the first wave of quinoaers, right? Old school! Except for maybe the Incas. They might have come first. When I first met David (in 1993) he made a quinoa-barley soup that his co-worker had recommended. And it was really good! I have to admit that I don’t cook with it as often as I should, and I’m ashamed to admit that it might be because it’s so popular now! It’s so earnestly vegetarian, which is a quality I admire in a food, but sometimes it makes me take a step back from it for a while. Silly, I know!!

If you’re looking for a way to introduce quinoa to somebody who hasn’t tried it, this might be it, because the quinoa is so much a harmonious part of everything going on around it. Malcolm asked what the little floating curls were, and I said, “sea monkeys!” Fortunately he’s too young to know what those are, so I revised my answer to “the ultimate Incan super-food, that made them into superheroes!” He liked the soup a lot, anyway.

I think this soup turned out really well! I’m quite proud of it! It’s got a really pleasing flavor and texture. Very savory, soft, but substantial, and comforting. I grated the zucchini, which, once cooked, gave it a perfect sort of texture. And I puréed half the spinach and chopped the other. I used the broth left over from cooking french lentils, but I think you could make a simple vegetable broth and it would be fine. It’s as close to chicken soup as I’ve come since I stopped eating chicken soup. And probably better for you! It’s simply seasoned with fresh thyme, nutmeg and cinnamon. I wasn’t sure this combination would work, but I went ahead with it on a whim, and it’s really good!

red pepper semolina crepes with broccoli rabe & chickpeas

My favorite meal in the summer is any meal that involves a lot of different little dishes. A mezze or tapas type of situation. It’s sort of funny that this makes me think of summer, because in the summertime we like to eat outside. If you do the math, you’ll see that this means that we carry lots of little dishes out the kitchen door, down a small path, down a step, and onto the outside table. It’s worth it, though! I swear it is! It was crazy warm last week, so we ate outside, and I’ve already started in with the summer meals.

Let me tell you about this one. I like to make a kind of crepe, a kind of green, a kind of sauce, a kind of salad, and a kind of potato, and have them all together. However…although we’ve had exactly this kind of meal before, we’ve never had anything quite like this!! I made crepes with semolina flour and roasted red peppers. Delicious! Not thin and elegant, exactly, but very satisfying! I made broccoli rabe sauteed with chickpeas and grape tomatoes. Lovely! And I made thinly sliced roasted potatoes seasoned with sage and Spanish smoked paprika. Finished with a simple salad of baby spinach and baby arugula dressed with with olive oil and balsamic, salt and pepper.

I’m going to post Dead Prez’ Happiness at this point. I should probably save it for later in the summer, but I need it now. So here we go…

Rice-flour crusted pastry with roasted chickpeas and broccoli

In which Claire begins a journey of discovery with gluten-free pastry crusts…

I had my first request! I’m so excited. I love a challenge! When I was little, I thought my cousin Becket was the coolest girl on the planet! I still do! Recently, she told me that her daughter was diagnosed with celiac disease, and she wondered if I’d ever made a gluten-free-crust for a savory pastry. Well, I had not. Though I’d come close! The truth is that I’m fascinated by different kinds of flour – chickpea flour, semolina flour, rice flour, tapioca flour, buckwheat flour, barley flour – on and on it goes! And I have many of these in my cupboard at the moment. But, first of all…I wasn’t entirely aware that not all non-regular-flours are not gluten free. As it happens, semolina flour and barley flour, to name two, are not gluten free. (Or so I’ve been told). And second of all…I’d never tried using these flours all by themselves, I always mix them with some amount of “regular” wheat flour. I suppose just so I know what to expect – at least a little bit!

Becket’s question prompted me to take it to the next level. I was determined to make a pastry with a gluten-free crust. So here’s my first attempt. I used rice flour, and I tried, as a sort of control, to make it as close to ordinary pastry crust as I could in every other way. I was worried that it wouldn’t be workable. I was worried that it wouldn’t be crispy. Well…it was a little hard to work with. It was like feta cheese, in texture. Just imagine trying to roll feta cheese with a rolling pin and mold it into a pastry! But I worked that out. I had to be less daring with the shape of the pastry. And one thing that I discovered was that this dough works better when it’s not so cold. I had chilled it, as one would do with ordinary pastry. Not a good idea. I had to warm it up a bit and work it in my hands before I could cook with it at all. And then I found it best to use my hands to press it flat, and do that directly on the baking sheet, rather than trying to roll it out, fill it, and then move it. But once I’d let it warm up a bit, I took a small ball, put it on the baking sheet, flattened it to be about 1/4 inch thick, and then used a spatula and my hands to gather dough from all around, pull it over the filling, and seal it on top. I’d take a pinch of extra dough to fill the gaps. Then I turned it onto the seam side. It was actually fun once I got started. Like playing with play-doh. Then I brushed the tops with egg, because it was so pale I though it would be nice to see it get browned a bit.

And, guess what? It did turn out crispy! Very crispy on the outside! Quite nice! Not the prettiest shape I’ve ever made. My son said it looked like a dumpling, and I’m ok with that. I would gladly make this again! Once I got the hang of it, it was a pleasure to make, and to eat!

You could fill this with anything you like, but I filled it with roasted chickpeas that I’d cooked in some approximation of a zatar spice. This is a middle-eastern spice mix that seems to always contain thyme and sesame seeds, but…beyond that, is pretty open to interpretation. I added oregano and caraway seeds, which I’d learned was a typically Palestinian addition. Lovely!

This doesn’t really have anything to do with anything, but it’s so stuck in my head right now! I love it to pieces. It’s Sir Lord Comic with Wh’appen?

Kale, sweet potato & chickpea stew with cumin, paprika & lime

Kale is not one of those shy and retiring greens that wilts away to nothing at the first sign of attention. I admire that quality. The presence of kale in this dish is probably what makes it a stew rather than a soup. The kale retains its curly, assertive texture to make this thick and hearty. The sweet potato and golden raisins add a touch of sweetness, and the chickpeas – well, you can’t go wrong with chickpeas, can you? The broth of this stew is a lovely mixture of flavors…it’s the broth that transforms humble, potentially stodgy ingredients into something exciting to eat. Smoky paprika, earthy cumin, spicy red pepper, and bright, tart lime. We ate these with pumpkin popovers.

Chickpea/sweet potato/red wine stew

We’re still working our way through the sweet potatoes and carrots from the CSA. And I’m still fascinated by star anise. This is a nice way to incorporate both. The pleasing texture of chickpeas goes well with the sweet potatoes and carrots. The mild sweet flavors blend with the slight dryness of the wine to make a rich, unusual broth. Sage and thyme, star anise and cinnamon – delicious together. I made cornmeal dumplings, but lighter and less stodgy than you would expect.

Did you know that Neil Diamond wrote Red Red Wine? It’s true, he did!
